This Pesto Quinoa Burger Bowl brings over 30g of protein + 15g of fiber from real food ingredients that naturally deliver. Store-bought vegan pesto and our quick-cooking burgers bring this all together in less than 30 minutes.

Pesto Quinoa Burger Bowl
Ingredients:
⢠1 package Abbotās Classic Smokehouse Burger
⢠1 ½ cups dry quinoa
⢠1 cup vegan pesto
⢠2 tbsp extra virgin olive oil, divided
⢠4 cups fresh arugula
⢠Juice of ½ lemon
⢠½ tsp kosher salt
⢠¼ tsp black pepper
⢠½ cup toasted pine nuts
⢠2 large yellow heirloom tomatoes, diced
Instructions:
1ļøā£ Cook quinoa according to package instructions. Let cool slightly, then toss with pesto.
2ļøā£ Cook burgers according to package instructions using 1 tbsp olive oil.
3ļøā£ In a bowl, toss arugula with lemon juice, salt, and pepper.
4ļøā£ In a large bowl, combine pesto quinoa, dressed arugula, pine nuts, and tomatoes.
5ļøā£ Divide into two bowls and top with the cooked burger.
