There’s more than one way to enjoy our veggie burgers.

This Pesto Quinoa Burger Bowl brings over 30g of protein + 15g of fiber from real food ingredients that naturally deliver. Store-bought vegan pesto and our quick-cooking burgers bring this all together in less than 30 minutes.

Pesto Quinoa Burger Bowl
Ingredients:
• 1 package Abbot’s Classic Smokehouse Burger
• 1 ½ cups dry quinoa
• 1 cup vegan pesto
• 2 tbsp extra virgin olive oil, divided
• 4 cups fresh arugula
• Juice of ½ lemon
• ½ tsp kosher salt
• ¼ tsp black pepper
• ½ cup toasted pine nuts
• 2 large yellow heirloom tomatoes, diced

Instructions:
1ļøāƒ£ Cook quinoa according to package instructions. Let cool slightly, then toss with pesto.
2ļøāƒ£ Cook burgers according to package instructions using 1 tbsp olive oil.
3ļøāƒ£ In a bowl, toss arugula with lemon juice, salt, and pepper.
4ļøāƒ£ In a large bowl, combine pesto quinoa, dressed arugula, pine nuts, and tomatoes.
5ļøāƒ£ Divide into two bowls and top with the cooked burger.
