I spent most of my Monday afternoon in the kitchen, but it was worth it. I wasn’t rushing the process took my time and enjoyed it. I haven’t done that in a while. This morning, I didn’t have to worry about preparing or cooking my meals; that’s key to staying on track.

Meal 1: Lemon 🍋 cottage cheese pancakes 🥞 I added 2 tbsp of keto syrup

Meal 2: Flank steak from seasoned with everything rub from & smoked on a Traeger grill, paired with organic jade pearl rice & air fried asparagus

Meal 3: Chicken breast season edges with everything rub paired with air-fried white potatoes & asparagus

I meal prepped some carne asade for the week to be honest my family will probably eat 3 lbs of it between today and tomorrow! I purchased all my meats from because the quality is the best!

I used Cherry wood pellets on the smoked the meat at 220 degrees for 15 mins, then turned up the heat to 325 for 8 more mins. The meat came out tender & so flavorful ! I seasoned it with everything rub from traeger! Usually the smoking option is to smoke the meats for a longer period of time but even when I smoke it for 20 mins I still get that smoky flavor and the meat is more tender.

I complimented the meat with organic jade green pearl rice & air fried asparagus 🤌🏽 perfect combo!

Sunday’s Breakfast 🥞

Currently my favorite I have this practical daily.

1 whole egg
35g of oats
50g of plain non fat Greek yogurt
100g of nonfat cottage cheese
1 tsp of baking powder
1/2 tsp of vanilla extract
Stevia

Blend ingredients pour batter over a low/ medium heat pan
Flip with the edges have bubbled.

These are soft and a bit tangy but they are so delicious even without toppings.

Topped with 10g honey, 25g blueberries 🫐 & bee 🐝 pollen

Kcals: 346/27g of protein/ 44.4 g of carbs / 7g of fat

Baked Wild king salmon , saddleback lobster tail, wild rice & bok choy


Baked the salmon at 325 for 20 mins , seasoned with fresh orange juice, honey , soy sauce & old bay seasoning.
Lobster tail butter & garlic seasoned with table seasoning.
Bok choy sautéed with soy sauce & pineapple
