The diagnosis of Celiac Disease, Non-Celiac Gluten Sensitivity or Gluten Intolerance can be a confusing and devastating change for anyone. Making sense of the conflicting research studies, the emergence of more "gluten-free" products, and the contradictory advice given by health care professionals does not help. As a Celiac patient myself, I have made it my personal life mission to help educate and support other folks with this disease by providing up-to-date articles and information as I find them, across the Universe, to you. Of utmost importance to me is getting to the honest truth about where gluten hides, what effects it has on the human body (Celiac and Non-Celiac alike), and what measures you can take to avoid it. Note: One thing you will NOT find here are recipes and links to gluten-free junk food! I eat REAL food, not trashy-food substitutes. But, I WILL post lots of gluten-free, organic, made from whole, real food, recipes that will feed both your body and your spirit, that will be free of gluten, sugar, corn, rice and other refined or highly processed flours.
