Our Functional Nutritionist DeeAnna shared this diabetic friendly and high protein snack idea, and it is too good not to pass along.
These Mediterranean spinach and feta crisps are easy to make and perfect for a quick bite. They yield twelve to fifteen crisps. Prep time is fifteen minutes and cook time is ten to twelve minutes.
Ingredients
1 cup fresh spinach, washed and chopped
1/2 cup crumbled feta cheese
2 Tablespoons whole wheat flour (**(instead of ¼ cup all-purpose flour)**
2 Tablespoons almond flour (**(for fiber and lower glycemic impact)**
1/4 cup grated Parmesan cheese
2 large eggs, beaten
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Salt and pepper to taste
Olive oil spray
Instructions
Mix all ingredients together until well combined.
Lay out small rounds on a parchment lined sheet pan that has been lightly sprayed.
Bake at three hundred seventy five degrees until golden. This usually takes five to seven minutes.
Let the crisps stand for five minutes so they can set up.
Tips
Serve with your favorite dips such as hummus.
You can make the crisp mixture ahead of time and store it in the refrigerator for up to twenty four hours. Shape the crisps just before baking.
