Fall Bread Baking Series🍂🍁

Honey Sweet Potato Cornbread

1 cup self rising flour
1 cup cornmeal
1 tbsp baking powder
1 tsp cinnamon
1 tsp nutmeg
3/4 cup sweet potato (baked)
1 cup oat milk
1/2 cup maple syrup
1/4 cup coconut sugar
1/4 cup (half stick) melted butter
2 eggs

Mix wet and dry ingredients separately then gradually pour wet into dry. Add tiny bit of orange food coloring for a deeper color. Bake on 400° for 18 minutes.

Drizzle with honey before serving.

Pink Lady Apple Crisp with Bourbon Pecans

Usually I keep my crisp recipes to cookie crumbles and pie crust pin wheels. This year I decided to make an old fashioned crisp with actual oats and unpeeled apples for the extra fiber.

8 Pink Lady apples (your choice of apple) cored and sliced, then tossed in sugar, cinnamon and cranberry juice (may substitute with lemon juice). Spread into bottom of pyrex. Mix 1 cup flour, 1 cup old fashioned oats, 1 cup brown sugar, and cinnamon together then spread over apples. Chop 1 stick of cold unsalted butter over crisp mixture, then cook on 350° for 50 minutes.

Garnish with Bourbon Pecans

Creamy Pork Loin Ultimate Veggie Pot Pie Soup with Jalapeño Pepper Jack Biscuits

Airfry Pork Loin on 365° for 25 to 30 minutes

Saute scallions, tricolor peppers and celery in butter or oil on medium-high heat, then season with your choice of seasonings. Pour in cornstarch slurry, veggie broth, chopped broccoli, red potatoes, peas, carrots, cubed pork loin, then plant based heavy cream and season to taste. Simmer on medium-low heat for 25 minutes.

Fall Bread Baking Series🍂🍁

Soooo, over the summer I decided that I would try baking bread with yeast... let's just say that didn't happen🥴 I researched simple roll recipes and came up with these.

3.5 cups self rising flour
1.5 cups Greek yogurt
2 tbsp Honey

Mix until dough, shape into balls, then bake on 375° for 22 minutes. Brush tops with melted butter.

They taste like a mix between a sourdough and brioche. I will work on getting those tops to be more uniform, but tasty🤭

It's Taco Tuesday, so I turned the pink light on today😉

Angus Beef, Black Bean and Argula Green Chile Enchilada Casserole with Spanish Rice

Brown ground angus beef on medium high heat, then add black beans, pico and rotel. Saute in argula, then season with your choice of seasonings. Pour in guacamole salsa then reduce heat. Add green chile enchilada sauce to bottom of pyrex then layer spinach tortilla, meat, cheese continue until filled. Bake for 45 minutes on 350°.

Fall Chicken Salad Series🍂🍁

High Protein Spicy Tuscan Chicken Salad

Airfry boneless, skinless chicken thighs on 385° for 22 minutes, then chop into bite sized pieces and season with your choice of seasonings, creamy balsamic, onion and garlic. Mix in chopped argula, sun dried tomatoes, English cucumber, and kalamata olives, then season again. Stir in Greek yogurt and olive oil mayo, then top with basil. Chill for 2 hours.
