GF/ V protein banana bread π _
Think we could all use a little healthy banana bread right now βΊοΈ_
I've been doing my best to keep my routine, I still wake up super early, work from home (who knew FaceTime training sessions could be so fun?), workout, program for my online clients, get some sun + now baking up a gluten free storm_

The goods_
2 cups almond flour (preferably blanched)
1 heaping scoop vegan vanilla protein
(Linked in stories, this is the only protein powder I've tried baking with)
2 1/2 overripe large bananas (save the other half for toppings)
2 flax eggs (or 2 whole eggs for non-vegans)
1/2 cup melted coconut oil
2 tbsp coconut sugar
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/4 tsp sea salt (if it's not pink Himalayan I don't want it) π
Handful of crushed walnuts (to top)

The mess_
No rhyme or reason, kinda figure it out as I go. Preheat your oven to 350. Make your flax eggs + set aside. Mix dry ingredients first then mash your ripe bananas + add in whisked wet ingredients. Plop in a greased loaf pan with coconut oil and top the mixture with sliced bananas, walnuts + sea salt. Bake for 35-40 minutes and let cool_
No over ripe banana left behind βπ½
