I’ve been slowly uploading my recipes to .app and I am so excited about this new platform. You can search recipes by allergies/dietary restrictions, ingredients, flavor, and food category. I've lost the energy I once had for making big, elaborate meals and am now leaning into recipes with minimal ingredients, effort, and cleanup. The hardest part of this whole food, plant-based Broccoli and "Beef" recipe is making the brown rice- perfect for a tired weekday.

EASY RECIPE BELOW:

This is one of my favorite meals (typically consumed in the summer, but a go-to in the winters when I get tired of 🥣 🍝): Mediterranean Buddha Bowl.

On a plate, serve up all or some of the following:
Bed of quinoa and arugula
Sliced cucumbers
Cherry tomatoes
Diced red onion
sliced pepperoncini
kalamata olives
chickpeas
hummus
fresh basil
a drizzle of good balsamic vinegar or balsamic glaze

It's been 2 months.⁠

2 months since we lost a tiny, unstoppable woman to a disease that takes no prisoners and shows no mercy.⁠

My Mother-in-law loved French Onion Soup and, while she wasn't even close to being vegan, I remember excitedly sharing this recipe for "Sinfully Delicious [vegan and oil-free] French Onion Soup" with her when I completed it almost exactly one year ago. Though I knew she would never make it for herself, she graciously fawned over the photos, said it looked great and she looked forward to trying it. ⁠

I planned to make it for her someday, but that day never came. So today, I'm making it in her memory, welcoming both the grief of missing her and the gratefulness that comes from having loved her and been loved by her.⁠

PRO TIP: People who eat pasta regularly don't experience Seasonal Affective Disorder.

In a study of n=1, I found I was much happier when eating pasta.

You can't beat this combination of meaty, smoked lentils and mushrooms with bright, tangy cashew cream sauce served over a tender bed of pasta. In just under an hour, this will be on the table, ready to dig into. Serve with an arugula salad or roasted green beans for a delicious, balanced meal!
