Cabbage Soup for Gut Support

Healing Cabbage Soup with Bone Broth

4 cups bone broth (chicken, beef, or turkey)
1/2 head green cabbage, chopped
2 medium carrots, sliced
2 stalks celery, chopped
1 small onion, diced
3 cloves garlic, minced
1 tsp olive oil or ghee
1 tsp sea salt (or to taste)
1/2 tsp black pepper
1/2 tsp dried thyme (optional)
1/2 tsp dried oregano (optional)
Optional: 1 cup chopped kale or spinach at the end for extra greens

Sauté aromatics:
In a large pot, heat olive oil or ghee over medium heat. Add onion, garlic, and celery. Sauté for 3–5 minutes until softened and fragrant.
Add carrots & cabbage:
Stir in carrots and cabbage. Cook for 2–3 minutes to start softening the veggies.
Add bone broth & seasonings:
Pour in bone broth and add salt, pepper, thyme, and oregano. Bring to a gentle boil, then reduce to a simmer.
Simmer:
Cover and simmer for 20–25 minutes until cabbage and carrots are tender. Taste and adjust seasoning as needed.
Optional greens:
Stir in kale or spinach in the last 5 minutes of cooking for added nutrients.
