holiday cordials are here! ✨
making these has become a holiday tradition of mine. it begins as summer is becoming golden & fruits are ready. hawthorne berries, blueberries & aronia berries (thanks ) are put into grain alcohol to steep. cranberries come later, but as soon as I see the first vt crop, I snag some & cover them in whistle pig whiskey (thanks ). the berries slowly give their medicine over to the liquor, including those gorgeous bioflavonoids that make the jewel colored liquid. after some months, as the days get short, I strain the fruit out while making a strong bitter root decoction on the stove. this is destined to be a herbal simple syrup, to which I add aromatics to lift it up. the aromatic herbs are added at the end to steep in the syrup before cooling enough to add the final hydrosols. i used rosewater & balsam hydrosols this year, both of which were made in my copper still earlier in the year.
those liquids are combined into a cordial - equal parts fruit tincture + simple syrup (or not so simple, in this case). the result is a beautiful berry colored glass filled with the tastes and smells of the year.
these are strong winter sippers, great for pouring after a big meal, relaxing by the fire, or toasting those you hold dear.
