Coconut vegetable curry 🥥🌶 I love coconut milk soooo much and this is one of my favorite meals to make with it. Here’s how you do it!

3 tablespoons red curry paste (I used Thai Kitchen from Kroger) 🌶
1-2 cans of coconut milk 🥥(I used one and it made about 2 servings)
3 minced garlic cloves 🧄
1 tsp fresh chopped ginger
1 cup broccoli 🥦
1 cup thinly sliced carrots 🥕
1 chopped bell pepper 🫑
Fresh cilantro
1/4 cup chopped green onion
Fresh lime
Salt & red pepper flakes to taste

Throw all veggies, coconut milk, curry paste, garlic & ginger in pot on medium-low heat. Let simmer until veggies are to your preferred consistency. I did about 7-10 min. Throw cilantro & green onion in and turn off heat.

Serve with jasmine rime & garnish with a lime wedge or sesame seeds! Enjoy ☺️

My mom found this at and I’m obsessed!!! I prepped 8 oz in mason jars & added turmeric, black pepper, mushroom powder (lions mane, reishi, maitake, cordyceps, shiitake, turkey tail, chaga blend) 1 tsp miso paste & used my frother to blend. I’ve had it the last 2 mornings heated up in a mug and it’s delicious! So good for the gut & immune health! 💪🏼

Not lying when I say we eat this every single week. 🍣 It’s so delicious and so easy! Salmon seasoned with magic seafood seasoning, topped with siracha and yum yum for me! Collin seasons his with teriyaki sauce and tops with liquid aminos and yum yum. Bake in the oven at 400 for 20 min or air fry at 400 for about 12min! Served with sautéed broccoli and zucchini seasoned with salt, pepper and garlic powder, and jasmine rice!

Homemade chicken broth 🍗 I’ve experimented with making my own broth! I am LOVING it. The flavors are unreal and it makes a huge difference in the soups I’ve been making. Here’s how I did it.

Buy a rotisserie chicken and take all of the meat and skin off (Collin has been eating it for lunches!). Place the bones and remains in your pot and cover with water. Add fresh ginger, garlic, & random veggies. I’ve used onion, carrots, brussel sprouts, and celery. I seasoned with salt, pepper, turmeric, Italian seasoning, onion powder, garlic powder. I can’t give you measurements because like I said it’s been an experiment! Once all the ingredients are in the pot put the lid on and let it simmer for an hour+. Cook to taste! When finished strain and store in fridge or add to crockpot if you’re using it to make a soup. It’s stored great in mason jars!

Ingredients

3 cups chicken broth
2 cans coconut milk (1 regular 1 lite)
Turkey kielbasa (I used 1/2)
1 cup carrots
Cheese tortellini
A few handfuls of kale
1 can rinsed white beans (I forgot them this time)
5 cloves garlic
Salt pepper, red pepper flakes, onion powder to taste

I post a spicy marg pic every few months it feels like… at least you know it’s my favorite! 🤷🏻‍♀️ Here is one a made last week! It is HOT 🥵 but not too hot.

Hot honey + Tajin rim

Juice of 1 lime
2oz tequila
1/2 of an oranges juice
