Making the most of a moment, amidst a busy work day and crazy life…

People (who are in my workshops and classes) always say…”you drive all over RI…that’s so much!” BUT-that is NOT how I feel! I love my work & all of the places, people, and experiences it brings to me❤️💪🏻

Another “Food Is Medicine”, food-demo class today❤️

~This is always a favorite!
So SIMPLE, economical, AND nutritious (& versatile!)

*missing from the pic is a bunch of spinach-you can use fresh or frozen (just allow it to defrost a bit before you sauté with the garic and tomatoes)

~Whole wheat pasta, white beans, petite diced tomatoes, spinach, fresh garlic and basil…topped with a bit of Parmesan cheese!
~We (Brown University Health/Community Health Institute) begin every meal with an extra-virgin olive oil 100% from California.

~You could add various herbs, artichokes, and/or more protein such as chicken (or meatballs!)
~If you need a gluten-free pasta, try the Barilla chickpea or red lentil pasta (two of my favorite “alternative” pastas, AND they have a high amount of fiber, nutrients, and protein!)

Quick, one-pot, very versatile, nutritious-high in fiber/lots of nutrients/includes plant-based sources of protein, & healthy fat…seasoned with salt & pepper, fresh garlic, fresh basil, parsley and thyme 😋

One of my summertime favorites!!!☀️🫑
…..eating delicious food to nourish my body! 🫑 🍅 🧅 🧄 🫘 ❤️

QUINOA, BLACK-BEANS, SWEET ONION, FRESH GARLIC, & SPINACH (sautéed and seasoned in EVOO with chili powder, cumin, little salt and pepper) STUFFED PEPPER (baked at 375 degrees for 25 mins)…topped with GRAPE TOMATOES, (small amount of) CHEDDAR CHEESE, & FRESH CILANTRO!

Benefits:
*plant-based (w the exception of the cheese 🤷‍♀️)
*gluten-free
*high in fiber
*high in plant-based protein
*very high in vitamin C and other nutrients!
*only took about 15-20 mins of prep and one pan!!!!
*it is economical!

-If you’re not a fan of quinoa, you can substitute with brown rice.
-For more fiber and a good source of healthy fat, you could also add some avocado slices 😋
-Work with your own tastes☺️

Pic on the left was right after I stuffed each 1/2 pepper, and was about to place it into the oven. Pic on right was after it came out of the oven and I topped it with the tomatoes, cheese and cilantro.
