Who needs a tropical vacation when you’ve got this Pink Dragon Dream Smoothie in hand?! 💕🌴

This creamy, fruity refresher tastes just as magical as it looks, and it only takes 5 ingredients to make it happen:

✨ What’s inside:
▫️ 1 frozen dragon fruit packet (or ½ cup frozen pitaya chunks)
▫️ 1 frozen banana
▫️ 1 cup plant-based milk
▫️ ½ tsp vanilla extract
▫️ Optional: 1 tsp agave or maple syrup if you like it sweeter

💡 Want to level it up?
Add a scoop of vanilla vegan protein, a pinch of cardamom for lassi vibes, or swirl in some coconut yogurt on top for ✨aesthetic✨ goals.

Just blend everything until smooth and enjoy your tropical escape in a glass.

I went on a mission to find Oshi’s plant-based salmon at Orchard Grocer here in New York City (one of my favorite fully vegan grocery stores!)… but they were totally SOLD OUT. 😭

Luckily, I spotted Oshi at the Plant-Based World Expo and finally got my hands on it—so of course I had to make a cozy Maple Miso Oshi Bowl the moment I got home. 🍱✨

👀 If you’ve never heard of Oshi:
They’re creating realistic “salmon” using soy protein + omega-3s from algae (the same omegas fish get from eating algae in the first place). SO smart. It looks and flakes like salmon—but no fish, no mercury, no microplastics, and totally vegan. If you’re plant-based (or just trying it), this is SUCH a fun alternative.



🍱 MAPLE MISO OSHI BOWL (Veginner recipe👇)

➤ Glaze:
1.5 tbsp miso
1 tbsp maple syrup
1–2 tsp coconut aminos
½ tsp rice vinegar

➤ Cook Oshi the official way:
• Start in a cold pan
• Medium heat, covered, 3 mins
• Flip + cook 1.5 mins
• Add a little oil + sear
• Brush glaze + caramelize

➤ Plate with:
quinoa or rice • steamed veggies • lemon squeeze 💛

Avocado toast, but make it ✨extra✨! 🥑✨ This beauty is layered with creamy smashed avocado, teeny tomatoes, a squeeze of lemon juice, a sprinkle of chili flakes, and crispy mushrooms for that perfect crunch.

💡 Veginner tip: To keep your avo toast from browning, mash your avocado with a squeeze of lemon or lime juice. It adds brightness and keeps it fresh!

✨Meal prepping isn’t about being perfect, it’s about setting yourself up for success!✨

Veginners, if you’ve ever opened the fridge hungry and thought, “Ugh, there’s nothing to eat,” meal prepping is your new best friend. It saves time, money, and decision fatigue. Plus, it helps you actually eat all those gorgeous veggies you bought.

Here are my 3 favorite veginner-friendly hacks to make it feel easy:
🥦 Pick 2 proteins for the week (think marinated tofu or a batch of lentils).
🌾 Cook one grain in bulk (quinoa, brown rice, or couscous).
🌈 Chop a rainbow of veggies ahead of time so meals come together in minutes.

Mix and match these building blocks and suddenly you’ve got endless bowls, wraps, and stir-fries ready to go. Future-you will thank present-you, big time!
