I went on a mission to find Oshi’s plant-based salmon at Orchard Grocer here in New York City (one of my favorite fully vegan grocery stores!)… but they were totally SOLD OUT. 😭
Luckily, I spotted Oshi at the Plant-Based World Expo and finally got my hands on it—so of course I had to make a cozy Maple Miso Oshi Bowl the moment I got home. 🍱✨
👀 If you’ve never heard of Oshi:
They’re creating realistic “salmon” using soy protein + omega-3s from algae (the same omegas fish get from eating algae in the first place). SO smart. It looks and flakes like salmon—but no fish, no mercury, no microplastics, and totally vegan. If you’re plant-based (or just trying it), this is SUCH a fun alternative.

🍱 MAPLE MISO OSHI BOWL (Veginner recipe👇)
➤ Glaze:
1.5 tbsp miso
1 tbsp maple syrup
1–2 tsp coconut aminos
½ tsp rice vinegar
➤ Cook Oshi the official way:
• Start in a cold pan
• Medium heat, covered, 3 mins
• Flip + cook 1.5 mins
• Add a little oil + sear
• Brush glaze + caramelize
➤ Plate with:
quinoa or rice • steamed veggies • lemon squeeze 💛
