New Jersey snack photo dump..

Traveling and eating well can be a challenge. Lucky for us we had multiple local markets to choose from to create amazing meals.. this tofu is seasoning strong and delicious. Blow up the photo and take a look at what we used. We pan friend the tofu with the spices and salt in a little avocado oil until crispy on the outside and added to our mixed greens with bell pepper, tomato, lupini beans, and cucumber. Here’s how we made the dressing:
• 1/2 cup kite hill Greek yogurt..
•1 tbsp extra virgin olive oil..
•1/2 lemon..
•1/4 cucumber- peeled..
•1 tsp dried dill..
•2 mint leaves..
•1 small clove garlic..
•1/2 tsp salt..
•blend until creamy..

Have you tried roasted cabbage yet? If you haven’t this is such a valuable addition to vegan eating! Neither one of us has ever really been into cabbage aside from the occasional taco garnish or kimchi. Roasted cabbage has literally changed what we add to the dinner plate. It absorbs herbs, salts, and spices, and is just delicious. You can literally season it with any of your favorites. This one is seasoned with Korean chili flakes, salt, garlic powder, sumac, paprika, and a little bit of Moroccan seasoning.. it was so perfectly delicious. Roast for 20 minutes covered, we seal it in foil with a little olive oil for 20 minutes at 425 f..

This salad was sweet, savory, and the tempeh added some much needed texture after being raw for a few days. It’s mango 🥭 season so we decided to add a whole one and we have no regrets.. This meal was so basic and easy, we think you might love to make it for yourself tonight 😜..

•Chopped and massages kale..
•chopped yellow or red bell pepper..
•a handful of kalmata olives 🫒..
•diced cucumber 🥒..
•diced mango 🥭..

For the Tempeh, cut into triangles and sear in a pan with some avocado oil, salt, and whatever spices you like. I’m this case we used Mediterranean seasoning..

For the dressing:
• 1 lemon juiced..
• 1 tbsp tahini..
• 1 garlic clove..
• salt..
• Mediterranean seasoning.. blend together until creamy.

We’ve posted these nachos a million times but they’re so amazing we have to share them again!! When you’re on a raw detox you definitely want to not feel deprived. This is one that will awaken your taste buds and leave you wanting more.. here’s how we made it:
𝐍𝐚𝐜𝐡𝐨 𝐂𝐡𝐞𝐞𝐬𝐞•
• 1 cup cashews..
• 1 cup water..
• 1 tsp salt..
• 1 tbsp nutritional yeast..
• 1/2 tsp tumeric..
• 1/2 tsp smoked paprika..
• 1 garlic clove..
Blend until creamy..
𝐓𝐚𝐜𝐨 𝐦𝐞𝐚𝐭•
• 1/2 cup raw sunflower seeds pulsed in the blender..
• 1/2 tsp each of:
Chipotle powder, garlic powder, onion powder, cumin, paprika, and salt..
Mix with the seeds and add a little lemon and liquid smoke..

Add the cheese and meat to jicama slices and top with tomato, onion, sliced jalapeño, and avocado..

We are on day 2 of an impromptu detox. Usually we will lead a group cleanse for 3 weeks, but sometimes our bodies will make an announcement of their own and let us know we need to work on reducing inflammation in the body. Today we hit it hard with fresh juice and a salad post workout.. here’s what we ate:

•16 oz of fresh pressed green apple juice..
• Last nights kale salad leftovers with a tahini, lemon, garlic, and water dressing..
• Apple, carrot, lemon, beet juice..

Going on a cleanse sounds harder than it is. Make tomorrows lunch tonight!

We were craving Cuban but also wanted to use the new jar of Za’tar. The meal came together beautifully and was a total flavor explosion. Here’s what we did:
Take a can of Jackfruit in brine, squeeze the water out of each piece, and give them a little shred. Mix in a bowl with salt, Za’tar and some olive oil. Throw in the air fryer for about 17 minutes and toss about halfway through. Serve with wild rice, black beans, fried plantains, and your veggie of choice. We topped our jackfruit with some salsa for a little kick. Enjoy!

Our trainer insists we eat right after our workout 🏋️‍♀️, so today we made an amazing chickpea salad sandwich 🥪 and it was ahhhhh-mazing.. here’s what we did:
• 1 cup chickpeas drained and washed (these are home cooked)..
• 1 celery stalk chopped..
• 1/4 of a chopped cucumber..
• 2 tbsp sauerkraut..
• 1 chopped pickled jalapeño or fresh whatever you prefer..
• 3 slices of chopped carrot, these ones are pickled..
• 2 heaping tbsp of vegan mayo..
• a dash of salt and paprika..
Mix, crush, add it to some vegan gluten free bread, and enjoy!!

As we make the journey into the warmer time of year it’s time to break out the raw food diary! This raw vegan taco wrap is amazing and beyond satisfying. Here’s how we made it:

• 1 cup soaked walnuts crushed..
• 1/2 tsp each of garlic powder, paprika, chili powder, onion powder, cumin, and salt..
• 1 collard greens leaf..
• 1 strip off a raw corn cob..
• chopped jalapeño..
• 2 raw pieces of pickled garlic..
• sliced tomato..
