I partnered with NOFO Bikes in Greenport for a Farm-to-Table Culinary Experience in Orient.

This is the perfect combination of everything I love.

Food-Farms-Fitness-Orient-Family-Friendship.

NOFO Bikes and I curated a personalized bike tour of picturesque and historic villages of Greenport & Orient. Mid way through the tour the guests enjoyed a relaxing lunch highlighting the bounty of local North Fork farms.

My culinary philosophy is seasonally-inspired and locally-influenced.

Kathy, owner of NOFO Bikes, and I have been friends for a really, really long time and it is truly special to share this venture together.

Nut butter bits at the bottom of the jar. No problem! Make overnight oats in the jar, adding nuttiness, healthy fat and some protein. Not the prettiest of pictures, but easy, healthy, delicious and no waste. I made this last night and had a nourishing breakfast ready for me post workout. I’m tossing frozen blueberries on top for a burst of color and antioxidants.

What to do with leftover grains and veggies? Cook them with pasture raised eggs and add avocado. I wish I had microgreens! But not today, so I drank a green smoothie and enjoyed a delicious and nourishing post workout breakfast. Protein and healthy fat along with complex carbs of brown rice, mushrooms, onions and bell peppers delivers a nutrient dense and satisfying meal.

Thanksgiving leftovers - riff on Shepard’s Pie. Garlic, shallots, carrots, celery, peas, diced turkey. I used arrowroot and pasture raised butter to make a roux and added a little almond milk instead of dairy. Turkey stock to moisten. The topping is a combo of left over mashed potatoes and sweet potatoes. Paired with a simple salad of red romaine and arugula microgreens dressed with lemon vinaigrette.

I eat mostly plant based. I think it is better for the body and better for the planet. Plants provide so many essential nutrients and amazing variety, which keeps us healthy. When I eat animal products, I always choose pasture raised; lucky to have access to local - even better! We enjoyed these pork chops from -farm with mashed potatoes, gorgeous purple cauliflower (roasted) and a quick sauté of peppers and onions. Simple, nourishing, vibrant and delicious.

Miso makes everything better! Made from fermented soybeans, miso adds a nutty, salty and savory flavor known as umami. A little miso goes a long way and packs a flavorful punch.

Fermentation = probiotics = beneficial bacteria for the gut.

Miso is also rich in antioxidants, essential vitamins and minerals, as well as bone strengthening calcium and vitamin K.

These local, organic carrot greens and hakurei turnips from are destined for Roasted Turnips with Miso Butter and Carrot Top Pesto using miso instead of cheese.
