How to Make a Simple Mongolian Beef Recipe

This recipe takes about 10 minutes to prepare, and about 10 minutes to cook. It makes 4 servings.
Ingredients
* 16 oz flank steak
* ¾ cup coconut aminos
* 2 Tbsp. red boat fish sauce
* 2 tsp. sesame oil
* 2 tsp. Maple syrup
* 1 tsp. arrowroot flour
* ¼ tsp. baking soda
* 2 Tbsp. avocado oil, divided
* 4 each scallions, sliced into small rounds
* 2 Tbsp. ginger, grated
* 4 cloves garlic, sliced
* 4 Fresno peppers, or if unavailable, 1 red bell pepper, diced small
* Kosher salt
* Sesame seeds, for garnish
Step 1: Slice the Steak 
Using a sharp knife, thinly slice the steak lengthwise as evenly as possible. If needed, half the steak across and then slice lengthwise. Transfer to a bowl and keep to the side.
Step 2: Make the Sauce
In a separate bowl, combine the coconut aminos, red boat fish sauce, arrowroot flour, baking soda, sesame oil, and maple syrup. Mix to incorporate and pour over sliced steak. Refrigerate for 10 minutes.
Step 3: Prep the Aromatics
Prepare all your aromatics by cutting the white bulbs of the scallions and keeping the green stalks separated, grating the ginger, slicing the garlic, and combining them all in a small bowl. Cut the Fresno peppers or red bell peppers into small cubes. Remove the seeds completely and discard.
If using raw beef, heat 1 tablespoon of avocado oil over medium-high heat and sear both sides for 3-5 minutes. Remove from pan and reserve the now cooked beef on the side. Reserve the marinade.
Step 4: Cook the Steak and Aromatics
Heat remaining 1 tablespoon of avocado oil in the same pan over medium heat (if using raw steak). Once oil is warm and shimmering, add your reserved aromatics and cook, stirring constantly to avoid over charring. Add the Fresno peppers and season with a pinch of salt.
Step 5: Add Sauce & Finish
Add the beef along with half of the marinade. This will deglaze the pan. Stir and scrape any browned bits. Cook for a minimum of 5 minutes or until the sauce has thickened and evenly coated the steak, adding a beautiful glaze.

How to Make Keto Pancakes
To get a solid keto pancake, we have substituted regular flour, with a combination of both almond and coconut flour. These two combined result in a very friendly texture and pleasant taste. The vanilla extract and sugar replacement (we suggest stevia or erythritol) add that hint of sweetness common to panckes without adding carbs. The combination of eggs, oil, and baking soda help provide moisture and that necessary leavening factor to create a super fluffy product. We've taken baking science and mixed it with our love for flavor. The result? A solid pancake recipe for your ketogenic needs.

Ingredients:
* 2 cups almond flour
* ½ cup coconut flour
* 3 Eggs, whole
* ¼ cup avocado oil
* 2 teaspoon vanilla extract
* 1 teaspoon stevia or erythritol
* ½ teaspoon baking soda
* ½ teaspoon salt
* ¾ cup coconut milk (water or favorite milk substitute ok)
* Spray oil
Kitchen Needs:
* Medium bowl
* Whisk
* Measuring cups
* Measuring spoons
* Non-stick large pan
* Plastic spatula
* Cooling rack

Step One: Mix Ingredients in a Bowl
Combine all ingredients in a bowl. Using a sturdy whisk, whisk together until fully combined.
If mix is too dry, add ¼ cup of liquid at a time. Whisk to incorporate and assess whether batter needs more liquid.
Step Two: Cook, Serve, or Cool and Store
Heat a nonstick pan over medium heat. Spray with spray oil. Measuring ¼ cup at a time, add ¼ cup of batter to pan, allowing a few inches of space in between pancakes. Adjust heat to medium-low if necessary.
Cook for 1-2 minutes undisturbed, and flip using a plastic spatula to avoid scratching the non-stick pan. Typically, a good indication it’s time to turn the pancakes is once bubbles start forming on the top raw side of the pancake. Flip and cook for another minute to two.
Once both sides of pancakes are cooked, remove and lay on a cooling rack to completely cool if using for meal prep. Otherwise, stack them on a plate and cover with a cloth to keep warm before serving.

How to Make Chimichurri Sauce

For the sauce you will need the following ingredients:
* 1 clove garlic, crushed
* 1 cup fresh cilantro, chopped
* 1/4 cup fresh parsley, chopped
* 1 shallot, minced
* 1 tablespoon fresh oregano leaves
* Pinch of dried red pepper flakes
* Pinch of black pepper
* 1/2 cup of olive oil
* 1/2 cup red wine vinegar
Step One: Mince shallots, garlic and Fresno and combine in a bowl. Add cilantro, parsley, and oregano. Mix to incorporate.
Step Two: Add oil, vinegar and black pepper. Taste for seasoning.

Baked Salmon Cakes with Chimichurri Sauce

Add some oomph and creamy, rich flavor to your Trifecta salmon with this simple salmon cakes recipe. Then top it all off with a zesty and vibrant chimichurri sauce!

INGREDIENTS
* 16 ounces Trifecta salmon
* 2 cups parsnips, sliced
* 1 cup onion, chopped
* 1/4 cup fresh parsely, chopped
* 1 tablespoon fresh rosemary, minced
* 1/2 tsp granulated garlic
* 1/4 cup liquid egg whites
* 20 whole-grain crackers
* Salt and pepper
* Chimichurri sauce (see recipe)

INSTRUCTIONS
* Preheat your oven to 375 degrees Fahrenheit
* Add parsnips to a pot of boiling water and cook until softened, about 5 minutes.
* Pulse crackers in food processor until your left with bread crumbs, set aside.
* Add onion to the food processor and pulse to finely chop. Then add cooked parsnips and pulse until well blended.
* Add your herbs, seasoning and salmon to the food processor and blend to create a thick paste-like consistency.
* Divide the mixture into 6 even-sized balls with your hands and place on a baking sheet lined with parchment paper. Use your fingers to flatten each ball into a patty shape.
* Bake for 25 minutes, followed by 5 minutes under the broiler to give them a nice golden crust.
* Top with chimichurri and enjoy!

Fall Pomegranate Chicken Salad Recipe

INGREDIENTS
* 16 ounces Trifecta chicken breast, diced into squares evenly
* 1.33 cup Trifecta quinoa
* 1 cup baby mixed greens
* 1 cup arugula
* 4 tablespoons pomegranate seeds, store-bought to save time
* ¼ cup Trifecta almonds, favorite kind
* 1 ounce Gorgonzola cheese, crumbled
* 4 tablespoon Mustard Honey Vin, store-bought or home-made
* Kosher salt, to taste
INSTRUCTIONS
* Prepare all ingredients as indicated. In a big bowl, mix all greens together. Season with a sprinkle of kosher salt.
* Portion 0.5 cup of green mix in each plate, ⅓ cup of quinoa, 4 ounces of diced chicken, sprinkle 1 tablespoon of pom seeds, followed by 1 tablespoon of almonds, and 1 tablespoon of crumbled feta cheese in the middle of the salad.
* Dress the salad with 1 tablespoon of mustard honey vin. Taste for seasoning and add another sprinkle of salt to the salad to bring up the flavor of all the ingredients. Enjoy!
* Conversely, feel free to mix each salad in a bowl following the same serving sizes.

Quick Mustard Honey Vinegar Recipe
* 1 tablespoon Dijon mustard
* 2 teaspoon yellow spicy mustard
* 1 tablespoon honey
* 1 tablespoon sherry vinegar
* ⅓ cup avocado oil
Mix all ingredients except avocado oil in a bowl and whisk. Once everything is incorporated, slowly whisk avocado oil into the mix. Season with salt and pepper. Save in an airtight container in the fridge until needed.
Serving; 1 tablespoon
