Plant-based/Dairy free Taco Bell Mexican Pizza 🌮 🍕

Pan fry 2 small flour tortillas (I used Siete almond flour) until slightly crisp
Top one with refried beans then
layer with meat filling cooked in taco seasoning (I used Noble Plate meatless crumbles)
Lay other tortilla on top
Spread with enchilada sauce (I used Frontera red sauce)
Top with Colby or Mexican cheese blend (I used Violife)
Bake @450 for 8 minutes
Top with chopped tomatoes and sour cream & green onions.

A classic with a twist: it’s like tuna salad, but chickpeas. Trust me, you’ll like it better. 😉 Mash chickpeas and then mix with vegan mayo, chopped red onions, chopped celery, capers, Dijon mustard, fresh dill, paprika, black salt (gives an eggy flavor), garlic powder, squeeze of lemon and lots of black pepper! I was out of bread so I put it on a mashed potato waffle 🧇 and topped with sweet Campari tomatoes. So good!

Sundays are for tots. Lots and lots of tots with this mind blowing Gochujang aioli dipping sauce I made. Just mix equal parts Gochujang (Korean chili paste) with vegan soy-free mayo. My favorite brand is by Chung Jung One and it’s vegan and GF. You’ll be addicted!

Doesn’t look like much but this is one of my favorite snacks that really satisfies when you want a sweet treat. Sliced bananas, Cinnamon peanut butter grain-free granola and cashew milk, with a drizzle of raw honey 🍯 You could add some blueberries 🫐 or raspberries too if you want to get fancy.

This vegan quiche turned out great- but I don’t share recipes until I’ve perfected it, so stay tuned. I used chickpea flour + almond milk for batter and added sautéed onions, mushrooms, broccolini, shredded a cup of Vegan Mozz, kale and swirled in some Passata (slow-simmered tomato purée), garlic, and black salt (for egg flavor). I’m going to try a sweet potato crust next time...

I’ve never gotten so many requests for a recipe after posting a pic to the ‘Gram... EVER... literally blew up my DM’s last night guys!! Thank you and so here it is - the best veggie burger you’ll ever have and I got it in one shot in the test kitchen. Huzzah! 🎉
Ingredients:
1/2 c. brown lentils
1/2 c. mashed chickpeas (skins off)
1/2 c. black beans
1 c. mushrooms
1 c. GF oats
1 c. cooked beets
1/4 c. tapioca starch
1/4 c. chopped red onion
2 chopped garlic cloves
1/2 tsp sea salt
1/4 tsp black pepper
1 tsp cumin
1/2 tsp smoked paprika
1/2 tsp oregano
1 tbsp parsley
1/4 tsp. red pepper flakes
Recipe:
Put all ingredients in a food processor until it’s a fine mixture but not a mash. Keep it a tad chunky but moldable. Form patties and pan sauté on medium heat with oil or bake in oven until crispy on the outside and moist (yes I said it) on the inside. Top with vegan queso/cheddar sauce, chipotle vegan mayo, pickles, avocado, ketchup, tomato, lettuce, WHATEVER THE F* YOU WANT. Get fancy if ya like.
