Elderberries are known for their anti-inflammatory properties and high anthocyanin content. Anthocyanin's are anti-allergenic, reducing the symptoms of allergic rhinitis (runny nose).

Anthocyanins are water-soluble plant pigments responsible for the vibrant red, purple, and blue colors in many fruits, vegetables, flowers, and even some insects. They are a type of flavonoid, a group of polyphenols found in plants, and are known for their potential health benefits, including antioxidant properties.
