It’s part of my morning ritual to sit outside with my coffee on sunny mornings. The morning sun helps with so many mental and physical health benefits. Something I enjoy about this ritual is picking the mug I am going to use. It’s a simple decision that sparks so much joy. This mug from the Bistro Tile collection at Anthropologie is one of my favorites. Such a fun, classic look that always receives compliments when I have guests.

This heat wave is a killer, but one thing sure to brighten my day is an amazing lobster roll. I know lobster meat can be pretty pricey, so I never pass up a good deal when I see it on sale.

Lobster rolls can be made in a variety of ways, but are best when kept simple. Allow that lobster to shine! This version is served cold in a light lemon/mayo dressing.

Ingredients:
• 16 oz Lobster Meat, poached and chilled (I used knuckle and claw meat)
• 1/4 cup Red Onion, finely diced
• 1 Celery Stalk, finely diced
• 2 Tbsps Mayo
• 1 Tbsp Fresh Lemon Juice
• Salt, to taste
• 6 Split-top Brioche Buns
• 6 Lemon Wedges

Instructions:
1. Add lobster meat, red onion, celery, mayo, lemon juice, and salt into a mixing bowl. Gently toss all ingredients until well combined and evenly coated in mayo.

2. Open rolls and evenly distribute lobster mixture between the six buns. Serve with an additional lemon wedge and micro-greens (optional).

Makes 6 servings.

It’s that time of year when everyone is cooking out and looking for amazing summer sides to take to that weekend BBQ. Well this refreshing option will satisfy everyone’s tastebuds, and have them coming back for seconds… and thirds 😉

Shaved Brussels Sprouts Salad with Honey Dijon Vinaigrette Dressing

Salad Ingredients:
• 24 oz Brussels Sprouts, Shaved
• 6 oz Slivered Almonds
• 1 Tbsp Avocado Oil
• 1 Tsp Kosher Salt
• 2 Tsp Smoked Paprika
• 1/2 cup Parmesan Cheese, freshly grated

Dressing Ingredients:
• 1/3 cup Avocado Oil
• 3 Tbsps Apple Cider Vinegar
• 2 Tbsps Dijon Mustard
• 2 Tbsps Honey
• 2 Fresh Garlic Cloves, minced or 1 Tsp Garlic Powder
• 1/2 Tsp Kosher or Sea Salt
• 1/4 Tsp Ground Black Pepper

Instructions:
1. In a small mixing bowl, add almonds, 1 Tbsp Avocado Oil, Smoked Paprika, and salt. Stir well until all almond slivers are evenly coated in oil and seasoning. Heat a medium sized skillet over medium heat. Once hot, add the slivered almonds. Toast almonds for 3 to 4 minutes, stirring continuously, until almonds are fragrant and light golden brown. Remove from heat and set aside.

2. Add all dressing ingredients into a large mixing bowl. Whisk vigorously until all ingredients incorporated and dressing is emulsified.

3. Add shaved Brussels Sprouts, Almonds, and Parmesan Cheese into the mixing bowl. Gently fold until all ingredients are evenly coated with dressing.

4. Place salad in a serving bowl, cover, and chill for 20-30 minutes. Before serving, top with a bit more Parm. Enjoy!

I have been obsessed with collecting cookbooks since I was a kid. The first one I ever purchased was in first grade at a school book fair (do they still have them?). I still have it! It’s fun for me to read through the recipes, cook some as is, put my own spin on some of them, and just gain overall knowledge and inspiration for food. It’s also fun to look back over the years and see what books have drawn my attention.

A few weeks back I purchased the cookbook and started flagging recipes I wanted to try. The first one I decided to tackle was her Chicken Parm recipe. The only change I made was using my own homemade Sunday Gravy recipe for the sauce. What can I say… I’m Italian! I just couldn’t swap it out for a jarred sauce, even if it was Rao’s.

The recipe didn’t disappoint! The use of almond flour crackers to make the breading was genius. Provided the perfect healthier crunch. The dish also stored well in the fridge for 3 days. I definitely recommend giving this one a try if you are looking to put a slightly healthier spin on a classic.
