Mmmm Chicken Fajita Salad! One white tortilla wrap is 270 calories and 44 grams of carbohydrates! But I do love the flavor of them so I took part of one and tore it up and put it on my salad. Then instead of a dressing I just had the sour cream and salsa. Perfect dinner! Eating healthier is easier simply by swapping out some components with healthier ones.

Dinner today was a homemade salmon cake over mixed greens with pickled onions and a char roasted poblano pepper tartar sauce! Delicious! I didn't even need a dressing for this one, the pickled onions gave the salmon a great sweetness to go along with the spicy tartar sauce.

Perfect weather today for a bike ride with the boyfriend! I forgot how much of a workout bike riding can be. I can already feel the muscle soreness starting... I love it! I'll definitely be taking my bike out more often. Getting outside is a great way to spend some time with a loved one. Go outside and enjoy this beautiful weather!

Yesterday's dinner was a chicken and shrimp Caesar salad! This is actually a leftover meal. I had made grilled chicken and shrimp earlier in the week so a simple way to use the leftovers would be a salad! I just had some romaine, yellow pepper, celery and the chicken and shrimp! Another walk at the lake yesterday! Just a different dog this time, this is Digger! I decided to do some vigorous activity on my walk yesterday. Instead of just walking I did some interval running. I would pick a point to start running and then as I started getting tired I would choose a point to start jogging, then a point to start walking again. Digger loved it and he flopped down and passed out when we got home. I only did about 45 minutes yesterday but I'm glad I got some vigorous activity in. I'm feeling great today!

One of the best parts about summer; grilling! Dinner tonight was a sweet and spicy grilled pork chop, corn on the cob and roasted potatoes! Portion size is a huge part of healthy eating! Your plate should be made up of half vegetables, quarter starch and quarter protein! Enjoy the warm weather and start grilling!

One of my favorite ways to get my physical activity in is by taking my dog for a walk at the lake! Or maybe he was taking me for a walk lol Did you know that the average adult should get at least 150 minutes of moderate to vigorous physical activity a WEEK. That's only about 21 minutes per day! My walk today was about an hour long and it flew by. And it was completely free to me besides the gas it took to get there. Next time you see your dog or even your kids just laying around make the decision and get them up and playing outside! It will not only be good for their health but also for yours!

These dishes are perfect for the upcoming spring and summer seasons! All 3 of these could be served as an hors d'oeuvres or dessert! I have a nice crisp baguette topped with a honeyed mascarpone cream, sweet strawberries, fresh mint leaves and a drizzle of honey. Then some poach peaches with vanilla bean ice cream. And finally, a strawberry sorbet perfect for the hot summer days!

Two fresh and simple but delicious salads! A Margarita Shrimp Salad with fresh mango and peppers. And then one of my all time favorites is the baby spinach salad with strawberries and cinnamon sugar roasted pecans. I love to have the sweet salads as an appetizer in the summer!
