Chicken & Black Bean Burrito Bowl

Straight from my wellness group’s weekly meal plan!

INGREDIENTS
2 Tbsp. finely chopped fresh cilantro
3 cups chopped romaine lettuce 1 cup cooked black beans, warm 11⁄2 cups shredded cooked chicken breast, warm
1⁄2 cup shredded Monterey jack cheese
1 cup fresh tomato salsa
4 Tbsp reduced-fat plain Greek
Drizzle of taco sauce

DIRECTIONS
Evenly divide lettuce between 4 serving bowls. Top evenly with beans, chicken, cheese, and salsa.
Top each bowl with 1 Tbsp. of yogurt and taco sauce; serve immediately. Makes 4 servings.

Food should be simple.

Either it fuels you, or it drains you.

Today in our 21 day bootcamp group we shared some small, non-scale wins we’ve had. My client shared that typically when she craves something sweet she would reach for a chocolate bar. This week she has shifted her mindset and instead of a chocolate bar, she opted for apple slices with Greek yogurt and PB.

It’s small simple shifts that lead to long term success.

PAPAYA BOATS:
1/4 cup of coconut yogurt
Sprinkle with berries, cacao nibs, granola and a drizzle of honey!

At Home workouts are much better with this cutie joining me.

just announced LIVE interactive classes coming this fall for $20/month! This is HUGE and makes me fall more in love with the company each day. Working out at home compliments my lifestyle in a million ways as a mom.

Keep fighting for what sets your soul on fire.

Coaching has kept me out of some dark places this past year. It’s continually kept me going, helped me love my body after having a baby, challenged me to keep showing up even when doubting myself, given me self confidence I never knew I had, and helped me move forward after incredible loss.

Helping others find themselves again is my passion and purpose in life. All the recipes, workouts, mom life stories, and resources I share with you all hopefully help in some area of your life. I’ve been able to help total strangers, my mom, and friends find a healthy routine that has brought them so much joy.

I cannot wait to see what this summer has in store for my clients and coaching business!

Don’t give up on something you once loved. Pick back up where you left off. I’ll be here cheering you on!

“I will never have this version of me again. Let me slow down and be with her.”

I’ve done a lot of rearranging over the last few months. I’ve allowed myself to rest & to stop doing things that were overwhelming me. Contrary to what we are told, sometimes routines need to be eliminated & simplified to make space for free time... Especially if they are causing burnout.

Reminders for the week:
-rest is not idleness
-make time for slow quiet moments that ground you
-your direction is more important than your speed
-you don’t have to hold yourself to a standard of perfection
-It’s ok to acknowledge that you have a lot on your plate
-sometimes taking care of yourself is simply sitting and doing nothing at all
-drink more water

I haven’t been this happy in months...

I’m feeling recharged, centered and aligned with where I’m at in life, my marriage, career, and with myself.

-I’ve had the best experience with CBD gummies the past month. Honestly I’m not sure if it’s a placebo effect, but my anxiety has felt so manageable. I feel chill and more like myself than I have in a long time.

- I started a new job with that I freaking love. Incredible companies with amazing benefits do still exist!

- Josie went back to daycare! I miss being with her all day, but it’s also been so nice to have more time to myself.

- I’m spending way less time on social media. Like, my screen time went down by several hours. For every hour I’m off, it’s a hour I can create memories with ppl who already exist in my life.

-I’m making less to-do lists and binging a few more shows because that’s what my enneagram 7 self needs.

I made ’s Magic Chocolate Chip Cookies last night and OMG...

I’m in heaven. Like, I’m not even telling you how many I ate. A little crunch on the outside and all the soft, ooey gooey chocolatey goodness on the inside.

I subbed a few different ingredients based off what I had in my pantry.

INGREDIENTS
-2 sticks (1 cup) salted butter, at room temperature
-3/4 cup light or dark brown sugar
-2 large eggs
-2 teaspoons vanilla extract
-2 1/4 cups all-purpose flour
-3/4 teaspoon baking soda
-1/2 teaspoon pink Himalayan sea salt
-1 1/2 cups chopped chocolate chunks or chips (I also used salted caramel bar)
-1 cup sweetened or unsweetened coconut flakes
-1/2 cup pecans
-1/2 cup coconut cream
