Is there really a perfect tomato? I have to say my grandparents had to have known something, I remember for lunch, every lunch that is, they would have sliced tomatoes, Cucumbers, half a sandwich and coffee. ❤️ And that's a wonderful memory to say the least. Both of my grandparents lived past 90 so there must have been something about the tomatoes, but what?

I'm going to call this "work smarter not harder pasta sauce". Now normally I stew my tomatoes, cook my meat, cut my veggies bite size, and cook my sauce all day then can. This time I'm trying something a little different. I'm going to roast these in the oven and keep as much "naturalness" as I can for that hardy flavor. I'll add a few seasonings so it's not bland but there will be no added sugars or oils. This sauce here will be so versatile that it can be used for just about anything even soup if you'd like. This is why I love having a garden even if it us chaotic at times......
