Good morning🌈☀️🍁

Nothing like some avocado toast to start my day.

I like putting Hommus Duo from which has sun dried tomato and cilantro lime flavors split so 2 flavors in one container🤗. My multi grain bread, avocado and topped with feta🥰

This food makes me happy☺️ and after a struggling 9 mile jog🏃🏿 and I mean struggling🤦🏻‍♀️ I was very happy to enjoy this tasty breakfast🤗

Love this Rissotto🤗💚
Mushroom asparagus with sautéed onion and garlic.☺️

I cook the risotto using veggie broth and I sauté half a chopped sweet onion before in the same pan. Add 1 heaping tablespoon garlic.

I cook the mushrooms and asparagus separately as the risotto takes a while so I follow the directions carefully so it doesn’t burn or get mushy.

Once everything is ready I add 1/4 cup nutritional yeast and seasoning salt, I like a good garlic salt to taste and top with veggies👍🏻 stir and serve.

Best the second day for leftovers as the flavors all marry together💛
Its not a quick meal but its delicious🥰

This Sunday is for football and relaxing and easy dinner🤗 I love a blue cheese burger on bread. People say the hardest thing for them to give up is cheese but I have to say with the new plant based cheeses on the market that should no longer be an issue.

This blue cheese my husband even loves and if you haven’t you must try it.

What was your favorite cheese if you have one and what brands have you found that you love that are vegan?

Just a little vegan gluten free french toast this morning🤗

Using and bread this turned out amazing👍🏻

I used 1/2 cup just egg
1/4 c almond milk
1 Tbsp vanilla( YES 1 tbsp). I like it strong flavor😂
A few shakes of cinnamon

Wisk and Dunk your bread saturate on both sides and cook on medium heat. It took a little longer to firm up so just monitor your toast to your preference, I don’t like mine soggy in the middle💜

I will be making this again now that I realize how well the just egg worked and tasted☺️

Its another amazing meal from

I am a soup lover as you will see this fall as I share some of my favorites but this split pea soup is on of my favorites I found at a restaurant👍🏻🤗

Its still warm here in Florida but there is still a fall sense floating around. I like soups if its warm or cold always gives me a full belly and a feeling of comfort🤗

Made some hearty breakfast cookies that fill me up and give me energy👍🏻

These could be 3 ingredient but I added a few extra🤷🏻‍♀️💚

1 1/2 cup oats
1/4 cup cocoa nibs instead of chocolate chips
1/4 cup shredded unsweet coconut
2 1/2 very rip bananas
1 tbsp maple syrup
1 tsp cinnamon

Mash bananas and add everything else👍🏻
Heat oven to 350, place cookie shaped mixture on parchment paper or non stick baking sheet.
Bake for 15 min.

And Enjoy

I cheated a bit and sprinkled them after with cinnamon sugar for more sweetness but realistically it didn’t need it.

I think these will be great on my running days when I want a filling but light enough snack to get me through a long run.

Its almost Halloween and you might be spending less time in the sun☀️ but you still must always protect your skin.

As a person with vitiligo protecting my skin is a daily ritual of covered clothing and sunscreen👍🏻

With fall in full swing dressing warmer helps but on warm and cold days the sun still can damage unprotected skin and eyes.

Don’t stop enjoying the outdoors, I never do. Fresh air is so good for mental health and physical wellbeing🤗☀️🏃🏿💚

Right now I love using sunscreens, anything with A mineral physical barrier is good for vitiligo. Yes it leaves a white cast but my skin is moisturized and I can put makeup over it if I would like😉

Any vitiligo vegans have a favorite sunscreen? How about my non Vit friends? Any great sunscreens that go under makeup?
