I love summer with all the fresh veggies from my garden 🪴 it makes dinner taste 💯 times better 😛 for dinner tonight we had bruschetta chicken, bruschetta lentil salad, and grilled hatch chilies!

🍅 chicken: marinate for at least 1 hour in balsamic vinegar, olive oil, parsley, salt and pepper. Grill and at the end top with mozzarella.

🍅 bruschetta: place 1-2 pints of cherry tomatoes in food processor with tbsp olive oil, handful of basil, 2 fresh garlic cloves, salt and pepper. Pulse.

🍅 hatch peppers: cut in half, toss with olive oil and salt and grill

🍅 lentil salad: 2 cups cooked lentils (I get the pre-cooked ones from Trader Joe’s and stick them in my freezer), feta cheese, basil, salt, diced tomatoes (or you can add a little bit of your bruschetta mix)

🌶 at the end plate everything and top your bruschetta on plate!

One of our absolute favorites to make all year round 🐟 Asian salmon bowls! So versatile of what you can put in the bowl. And this is what we got right now!

Steelhead (or salmon)
- season with miso, pepper, soy sauce, honey, garlic powder, onion powder, fresh dill. we grilled ours
kale salad
- 6 leaves of flat leaf kale, 1/2 cup chopped red cabbage, shredded carrots, 2 tbsp olive oil, 2 tbsp rice vinegar, 2 tbsp soy sauce or coconut aminos, 1 tsp sesame oil, 1 lime juiced, salt and pepper to taste so maybe a pinch of each.
- mix the dressing in a bowl, chop up the kale (remove the stem), and other veg and throw in the bowl with the dressing. Mix it well!

To assemble the bowl!
- cooked rice, kale salad, cooked steelhead, diced cucumbers, kimchi, picked ginger (a lot of it 🙊), seaweed, siracha mayo, sesame seeds

To eat:
Mix it all together and try to eat it slow bcuz it is so good and will be gone before you know it!

Trader Joe’s haul and a nice tuna pasta salad with the quinoa brown rice noodles we’re had this last week! Great for meal prep as it makes a lot! 🍝 🥗

Quinoa brown rice noodles
Canned tuna
Celery
Bell peppers
Red onion
Cherry tomatoes
Cucumber
Dressing:
2/3 cup mayo
Fresh dill
2 tsp soy sauce
Tbsp dijon
Juice from half lemon
Salt and pepper to taste

Serve over some spinach! It was so good you have to try it for yourself!

One of my most favorite soups🍂 POSOLE which is a pork and hominy soup 🍲 PERFECT for that comfort food dinner night. I place everything in the crockpot the night before and put in the fridge for the morning when I’m ready to just plug it in 👌🏻

3-4 lb pork roast shoulder boneless
24 oz salsa verde
12 oz can diced Ortega chilies
1 medium yellow onion diced
2 cups chicken broth
2 - 25 oz cans hominy
2 jalapeños diced and seeds removed
Handful cilantro
- place everything into the crockpot and cook on low for 8 hours. Take pork out of crockpot and shred. Place back into crockpot and can cook for another 30 min to one hour. Enjoy topped with fresh avocado, cilantro, and a dollop of daisy if you’d like. Enjoy!

Sushi bowls for dinner tonight and thankfully we have a bunch left for dinner for the next few nights 🤞🏻
Salmon or steelhead
Season with salt pepper and garlic powder. Bake at 400 for 25 minutes or until done.

Kale salad dressing:
1 bunch of kale
2 tbsp lite soy sauce
2 tbsp rice vinegar
Juice from half a lime
1/4 cup olive oil
1 tbsp minced garlic
1/4 tsp salt
Mix dressing together and pour some over the top of chopped kale and massage until kale is soft.

Sriracha mayo:
1/4 cup mayo
2 tbsp srirachas
2 tsp sesame oil

Assemble:
In a bowl, add jasmine rice, salmon, kale salad, edamame, ginger, cucumber, seaweed, soy sauce, Sriracha mayo, sesame seeds

Happy Valentine’s Day to everyone out there and to send a reminder that this day isn’t all about couples. It’s about loving yourself and loving all your friends and family that surround you everyday 🥰

Here is an easy breakfast that is perfect to prep for a busy week ahead. Plus you make it the night before and pop it in the oven in the morning. Here it is 👇🏻

overnight blueberry french toast: 🫐🍞

2 cups blueberries
1 1/2 cups milk
1 loaf brioche bread (or other type of bread)
3 eggs
2 tbsp maple syrup
Juice from one lemon
Zest from one lemon
Crumble:
1/4 cup cold butter
1/4 cup brown sugar
1/4 cup flour

1. Spray 9 x 13 pan with oil
2. Cut bread into cubes and place into dish
3. Layer in blueberries
4. In a small bowl whisk together milk, eggs, syrup, lemon zest, lemon juice and pour evenly over bread and blueberries
5. Cover and refrigerate overnight
6. In a bowl combine flour brown sugar and butter cubes and work with fingers and crumbled. Sprinkle over the top
7. Big for 35 to 45 minutes at 350°. Talk with powdered sugar and serve hot with maple syrup

One reason I’ve been pretty much MIA from insta is the fact that so much has happened in such a short time. David and I are now home owners and boy have we been busy! Just when we think we are settled in, there is more to be done! We closed on December 10th and moved in December 13th. It’s been a journey and I wouldn’t want to do it with anyone else! ❤️🏡
