I love summer with all the fresh veggies from my garden 🪴 it makes dinner taste 💯 times better 😛 for dinner tonight we had bruschetta chicken, bruschetta lentil salad, and grilled hatch chilies!
🍅 chicken: marinate for at least 1 hour in balsamic vinegar, olive oil, parsley, salt and pepper. Grill and at the end top with mozzarella.
🍅 bruschetta: place 1-2 pints of cherry tomatoes in food processor with tbsp olive oil, handful of basil, 2 fresh garlic cloves, salt and pepper. Pulse.
🍅 hatch peppers: cut in half, toss with olive oil and salt and grill
🍅 lentil salad: 2 cups cooked lentils (I get the pre-cooked ones from Trader Joe’s and stick them in my freezer), feta cheese, basil, salt, diced tomatoes (or you can add a little bit of your bruschetta mix)
🌶 at the end plate everything and top your bruschetta on plate!
