In true 2020 fashion, our first tomato harvest was not what we anticipated. While my three year old and I were carefully watering (me) and singing to (her) our cute baby peas climbing a trellis, my youngest harvested quite a few green tomatoes 🍅💚

At first I was frustrated and a little disappointed, but then I remembered that gardening with my kids was one of the things I was most excited about! His sweet face lit up holding these little treasures and so we headed to Pinterest to find a fried green tomato recipe to try 🥰

Some distance from social media has been really great for me and my family. I have learned some valuable things about myself during this difficult season and took a step back to do some re-evaluating. As we continue on I’m going to focus on appreciating and seeking out the little blessings in gardening and in life🌱

YOU MATTER 🙌🏼

More than what you cook. More than how many vegetables your kids eat. More than your weight or height or personal style (or if you’re wearing real pants right now). More than how many followers you have. More than what you do for work. More than what house you live in. More that how polite your kids are. More than how much TV you (or your kids) watch. More than ______ (you fill in the blank)!

In honor of Mental Health Awareness Month, I’m taking a step back from posting here for the remainder of the month to get my footing. There is a lot going on in our world at the moment and quite a bit in my little world too and I could use some time away to refocus.

If you could use some time away from the gram, I encourage you to do so too. Call a friend, hang on someone’s porch, map out some goals, take a nap, see a counselor virtually, read an inspiring book, hug your family, offer help to a neighbor, find a local organization to support. These are all on my list because to me they are life giving, but they don’t have to be on yours. Hugs to all of you! 💕

🥛CASHEW H**P MILK 🥛
Making plant-based milk from home is easy and all you need is a blender! This recipe is a favorite of ours because the cashews give a rich and creamy taste and the h**p seeds pack a nutritional punch of protein, calcium and an ideal omega 6 to omega 3 fatty acid ratio (which promotes brain and heart health and is anti-inflammatory).

You’ll need:
- 1 cup raw cashews, soaked for 3 hours
- 1 pitted date, soaked with cashews
- 1/4 cup of h**p seeds
- 4 cups of filtered water
- 1 pinch of sea salt

Add these ingredients to the blender, blend on high until creamy, run through a sieve and you’ve got nutritious homemade non-dairy milk 👊🏼

It took me a long time to feel confident cooking with dried beans and legumes. It was something I wanted to do, but every time I needed some beans for a recipe, I just grabbed another can. It seemed so intimidating!

Well about a year ago, in small effort to reduce our family’s waste, I bought some dried chickpeas at the store. As it turns out it’s actually really simple! As long as you know how to properly prepare them and think a bit ahead, it’s really great to have a stock ready (especially during this pandemic when we’re stretching time between grocery store visits).

The nutritional benefit of soaking and sprouting certain grains, nuts, and legumes was a big topic of conversation among my classmates when I was earning my master’s degree in nutrition. Soaking and sprouting reduces anti-nutrients like phytic acid and improves digestion. Since the legume family can often give digestive trouble, Knowing how to properly prepare them is key.

I love this succinct guide (swipe to see) that .foods put together and reference it often. Anyone else missing the Farmer’s Market right now? 👩🏼‍🌾🥬🥦🧄🍊

I know that they are open and there are literally people there right now, but I can’t get myself to go. It’s not that I don’t support it being open now because I do 💯percent. Shopping in the open air, with social distancing measures in place, supporting local farmers, buying what you NEED to feed your family is all awesome.

Reasons I’m not going:
1️⃣ This week has been a doozy and I’m going to spend as much time with my family as possible
2️⃣ After running a few errands yesterday I’m feeling the heaviness of seeing everyone in masks and wondering how long things will be this way (I miss the smiles and community)
3️⃣ We don’t really need anything and we are doing our best to support local farmers in other ways
4️⃣ The things I love about the farmers market like interacting with the produce, listening to music, lingering, sampling, etc are all against the rules and I’d like to preserve it the way it is in my mind until we can go back to (some or most) of that hopefully soon.

Sharing these thoughts in case anyone else is feeling them too. Sending a GIANT thanks to local farmers and everyone working at the farmers markets, grocery stores, nurseries, and hospitals today and everyday.

BRUNCH 🍳

pre-pandemic (and mostly pre-children) definition: sleeping in past breakfast, putting on cute clothes, going out for a delicious (and leisurely) meal, being too full to eat an actual lunch.

Current definition: the meal my toddler eats an hour and a half after breakfast and an hour and a half before lunch because he is STARVING and a snack won’t cut it.

Anyone else cleaning their high chair like 17 times a day like me? 😂

🍌 BANANA BREAD MUFFINS 🍌
Apparently banana bread is the official baked good of the pandemic? Not sure how this was decided but I can’t argue! We’ve certainly been baking a bit more these past few weeks... the perfect opportunity to make tweaks to this recipe and this last batch was 😋

I’m not a baker but these are so easy to make and don’t last long in my house! They are refined sugar free (sweetened with bananas, apples and a bit of maple), and a good source of fiber and healthy fats 👌🏼

We’ve had constant showers all morning here in the PNW, which is pretty typical for April but a definite shift from the surprise sunshine we’ve been having. I love that our earth is getting this replenishing drizzle on her day, seems like the perfect way to celebrate 🌎

We’re embracing these cozy vibes under blankets with piles of our favorite nature books (swipe for a glimpse). We might go jump in puddles later, but for now we’re content ☕️📚☔️
