I woke up this morning so happy. It is overcast, cool, humid and drizzling. I realized that the weather reminded me of England and it felt like home. I went on FB and found this memory of today from 6 years ago. The Crooked House is no longer a tea room. I’m so glad we got to visit while it was. Windsor was my favorite place to visit and shop. Feeling soooooo homesick right now.

Looking back at this adrenal crisis is sobering. I was in Kazakhstan with limited medical care and a medical jet on standby to fly me to Dubai where the next best medical care awaited. My blood pressure hovered at 66/24 for eight hours. I don’t know how I survived the day. I never lost consciousness and was talking to the doctor the whole time. At one point I got tired and closed my eyes to take a nap. My doctor persisted in summoning me back, ‘Mrs Carroll, MRS CARROLL! How are you feeling?’ I opened my eyes and said, ‘I’m exhausted and nauseous and want to sleep, can you leave me alone?’. He replied, ‘I don’t want to worry you but your blood pressure is dangerously low. You are in danger of heart failure and I can’t believe you are able to talk to me right now. So, I need you to stay awake and keep talking to me for a little while longer. Can you do that?’. I came home from the clinic 24 hours later, fattened up by steroids and IV fluid and resumed life as usual not realizing that I almost died.

When we moved to Kazakhstan I stopped sending Christmas cards and have never gone back to snail mail. Crazy, right?
Please DM your address and I will send you an announcement. It is a crazy end to high school for these seniors. I hope to make it a little sweeter.

‘Bowls’ have become a menu item. Is it a taco bowl? Korean Bibimbap? Greek inspired? I provide a base (Quinoa, Cauliflower rice or white rice), assorted toppings of veggies and protein and sauces. My favorite was cauliflower rice, chicken and cucumbers topped with tzatziki. We had so many variations!

We had the yummiest tin foil dinners and ate outside while we had a warm day. Just put out the ingredients and let everyone make their own. We used beef mince and chicken breast for our protein and let everyone add their own combo of potato, sweet potato, carrots, onions, asparagus and red peppers. I seasoned the beef with Lawry’s season salt and the chicken with my own sauce of olive oil, lemon juice, salt, pepper and fry seasoning. @ Draper, Utah

When I lived in the UK I learned to prioritize being out doors when it was sunny. It kind of rains a lot there. I even took the kids out of school one day just so we could go to our favorite park. I’m learning to do it here and it feeds my soul.
