Managing my Type 2 Diabetes, I don’t eat a lot of pizza, but Elissa and I wanted to make a pulled pork, jalapeño, and pineapple pizza, like the one we had on O’ahu last week. I used a product called Scotty’s Everyday Keto Pizza Crust Mix. It’s a mix that, supposedly, makes a zero net carb pizza crust. It makes a good pizza, but it’s not 100% like a regular pizza crust. But since I don’t eat regular pizza crust, I’ll use this product again!

I used pulled pork I had smoked a few nights ago! The best thing about smoking a pork butt is that there is a lot of leftovers, and the extra pulled pork is great for making several dishes, including bbq pizza.

I used a pizza stone in my gas grill, so I wouldn’t heat up the house baking a pizza. No way can we turn on the oven in the middle of summer!

Type 2 Barbecue Loco Moco!

Locals in Hawaii love the Loco Moco. It can be found on menus all over the island. They use white rice as the base, but I substituted that with cauliflower rice, making this a low carb, diabetic friendly meal.

Put a scoop of cauliflower rice on a plate, place a grilled burger on top of it, put some sautéed onions on the patty, then scoop a small amount of brown gravy over everything, then top it off with a sunny-side up egg. You want the yolk to ooze down and mix the gravy as you eat your Loco Moco. This is a very delicious Hawaiian dish!

London Broil is another cut of meat that benefits from a marinade. London Broil isn’t my favorite cut of beef, but it is lean, and it is usually inexpensive. We sliced up half of it for dinner tonight, but I intend to slice up the leftovers for salad Monday.

My favorite way to cook salmon!

You lay the fish down on a cedar plank. Cedar planks can often be bought at places that sell barbecue supplies, such as the barbecue section of Home Depot or Lowe’s. My butcher even sells them. You place the plank on the grill above the heat source, and as your salmon cooks, the plank starts to char, and it gives the salmon a cedar taste. Cedar is a potent smoke, but salmon cooks very quickly, so it is done before it gets too smoky. Often, the skin of the salmon sticks to the board, and you can take a spatula and lift off the meat very easily.

Salmon is one of the best things we can eat, because of the healthy fats it’s has. And since salmon cooks so quickly, it is a perfect meat for weeknight dinners!

Buffalo chicken wings can be a quick weeknight dinner, and very low carb IF you avoid any sort of breading. Grilling them is such a great way to cook wings, as excess fat melts off in the grill! As a diabetic, I am 100% certain these won’t raise my blood sugar.

I used a low setting on my gas grill, but I usually do wings on the charcoal grill, where they get a little smoke flavor, but it’s Tuesday, and I wanted these done quickly. The sauce is a simple buffalo sauce, made with butter, Frank’s hot sauce, some granulated garlic, and some black pepper.

Every weekend I smoke boneless skinless chicken thighs, and then put them in the fridge after they cool down. Having sugar-free protein in the fridge makes it so easy to make a quick, healthy meal! We often chop up a few thighs for a big salad, or I will grab two and enjoy with some veggies. I’ve even made chicken salad (chopped chicken and avocado mayo), for a quick lunch.

These were marinated in a huli huli marinade, and then smoke with some mesquite. A lot of pitmasters would suggest that mesquite is pretty aggressive for chicken, but Hawaiians use kiawe wood to barbecue, and that is a Hawaiian variety of mesquite. Look at the color! 😍😍😍

Beef back ribs are usually pretty cheap! When the butcher removes these from a prime rib roast, he slices as close to the bone as possible, and beef back ribs are sort of the scrap. They are great, but I vastly prefer pork ribs.

I used the SPG rub on these, and barbecued them for 4 hours. Very tasty, and won’t spike your blood sugar!

I haven’t posted in a while! It’s been a season. Still eating sugar free barbecue though!

This is a flank steak I marinated overnight for a flank steak salad for lunch today. The before shot is the steak smoking before I give it a quick sear. I smoked it till internal temp was 130°. Then I pulled it off the barbecue, and let the charcoal get really hot, for the sear.

I actually prefer rubs to marinades, but flank steak is one of those cuts that really benefit from marinading over night. There’s another cut I will smoke soon that benefits from a marinade. Stay tuned!

I reverse seared a New York steak, and paired it with some grilled green beans and some cauliflower mash. This steak was amazing, and didn’t cause a sugar spike!

Reverse seared is a technique where you cook the steak close to the desired doneness with indirect heat. It’s kinda like baking, but in the grill/smoker. Then you sear the outside with very high direct heat to get the crust on the outside. I’m a huge fan of reverse seared!

It’s Flag Day! Weber made a patriotic kettle, and I had to have it. I’m smoking ribs for dinner, and I used a sugar-free Basic Barbecue Rub. The recipe for the sugar-free rub is in the Type 2 Barbecue Facebook Group Files section.
