This protein & fiber packed meal was so ~*easy*~ and ~*delicious*~

Chickpea Casarecce with Chicken & Broccoli

INGREDIENTS:
→ 2 boneless, skinless chicken breast
→ 1 tsp garlic powder
→ 1 tsp black pepper
→ 1 tsp Italian seasoning
→ 1 box Casarecce chickpea pasta
→ 1 lb bag frozen broccoli florets
→ 1 jar no sugar added pasta sauce

DIRECTIONS:
1. Preheat oven to 375
2. Cut chicken breasts in half length-wise
3. Evenly sprinkle seasonings on front and back of each piece of chicken
4. Bake 25 minutes, flipping half way
5. Cook pasta according to box directions
6. Sauté frozen broccoli in large sauté pan 6-8 minutes, stirring frequently
7. Add pasta sauce to pan with broccoli
8. Add cooked pasta, and diced roasted chicken to pan with broccoli & sauce
9. Enjoy!

Over-due for a recipe!

Oatmeal Banana Cookies

Ingredients:
→ 2 ripe bananas, mashed
→ 1 cup quaker oatmeal
→ 1/4 cup chopped walnuts
→ 1/4 cup mini dark chocolate chips

Directions:
1. Preheat oven to 350°F
2. Mash all ingredients together
3. Divide into 6-8 cookies (about 1-2 tbsp each), flattening them on a baking sheet with non-stick spray
4. Top with a small pinch of sea salt on each
5. Bake 15-20 minutes, flipping half-way until golden brown

Serving Size: 1 Cookie (1/8 recipe)
115 calories
5 g fat
1.5 g saturated fat
200 mg sodium
2.5 g dietary fiber
5 g sugar
1 g added sugar
3 g protein

This took 5 minutes to make because all my ingredients were already prepped in the fridge! The sweet potato cubes were already made & the kale was washed and chopped ✅

‣ 2 eggs
‣ Turkey sausage
‣ Sweet potato
‣ Kale
‣ Garlic powder
‣ Everything but the bagel seasoning
‣ Onion powder
‣ Black pepper

Delicious!!

Anyone else love cinnamon sweet potatoes? The easiest thing to prep and use with all different meals! I just cube, drizzle with olive oil, sprinkle cinnamon, and bake on 400 degrees for about 30 minutes. Haven’t had them in a while but bringing them back! I used to love them with scrambled eggs or just on the side with lean protein and non-starchy veggies! Unpeeled sweet potatoes have more benefits but I happened to peel these today 🤪

Some benefits:

✨4 grams of fiber per cup (cubed), which can help lower cholesterol, keep you full, aid digestion, control blood sugar levels, etc.

✨Vitamin A in the form of beta-carotene, which is protective against certain diseases

✨Potassium, aiding in normal cell function, regulates the heartbeat, helps synthesize protein and metabolize carbs, etc.

✨Magnesium, playing a role in bone health, heart health, and necessary for >300 enzymatic reactions in the body

& more!!

➡️Olive oil has many benefits! It is rich in monounsaturated fat, helping to lower LDL and total cholesterol levels. Eating healthy fats is important for creating hormones, providing energy, supporting cell function, absorption of fat soluble vitamins (A,D,E,K), and more

💡Some studies also show benefits of cinnamon such as improved glucose, lipid, and insulin levels BUT more research is needed 📝
