This is how I enjoy PURPLE 🍠 sweet potato~
🍠 Chop in rounds, air fry, then re-heat as desired for a tasty fiber rich colorful complex carb.
🍠 The phytonutrient rich in purple veggies and fruits called anthocyanins are rich antioxidants & are key players in an anti-inflammatory diet. 🍴 yum 🍴

Another approach is to ADD foods to your diet that enhance the quality. (Beans, veggies, nuts/seeds, fruits, etc)

2026 is the year of the “bowl” in my house. We all love to customize our bowls with different veggies, sauces, or toppings.

The superfood in this bowl is the lentils, which add a significant amount of potassium, iron, magnesium, protein, and fiber.

🍌Easy no cook breakfast with 9gm of fiber and ~30gm of protein. Flexible to add more nutrition to it as needed.

🍌FYI: I do not track my meals regularly, nor require my patients to track intake. Tracking using apps can be a helpful tool to *learn* and that’s why I share the macronutrients- for education. I LOVE the Cronometer app (the gold version, specifically) as it gives NO kudos for undernutrition, it provides your other awesome focus points like fiber, potassium, bone health, etc, which are VERY important for overall health 🦴 💪🏼 🫶🏻 .

I have a new friend who is inspiring me in the kitchen. Yes I help inspire those in the kitchen for a living… but we all need a little kick in the rear sometimes!

Borscht can be made in many different ways, and my way was most definitely delicious.

The best thing (other than the taste!) was that I had all of the ingredients on hand🥳.

Simple Borscht
-Make mirepoix in a large pot (and add 3 minced garlic cloves to the mix).
-Add 4 cups broth of choice- I used Costco’s organic chicken broth. Bring to a boil.
-Add 1 tsp apple cider vinegar… then add peeled and chopped beets and chopped potatoes. Cook until beets and potatoes are done. -Add chopped cabbage and cook another few minutes until that is done. Season with S&P.
-Serve with sour cream and fresh dill on top. 🤤

Restaurant review- Ojai, Ca
(Rory’s Other Place) had a divine menu to choose from- grab and go sandos, salad nicoise, coconut yogurt granola bowls, Macha, chai, coffee, soup- you name it! Many options. My veggie sando on homemade seed bread was SO right and SO full of fiber. We loved this place so much we put an order in on the way back to the airport. So delicious and with a nice little patio outside!
