I have a new friend who is inspiring me in the kitchen. Yes I help inspire those in the kitchen for a living… but we all need a little kick in the rear sometimes!

Borscht can be made in many different ways, and my way was most definitely delicious.

The best thing (other than the taste!) was that I had all of the ingredients on hand🥳.

Simple Borscht
-Make mirepoix in a large pot (and add 3 minced garlic cloves to the mix).
-Add 4 cups broth of choice- I used Costco’s organic chicken broth. Bring to a boil.
-Add 1 tsp apple cider vinegar… then add peeled and chopped beets and chopped potatoes. Cook until beets and potatoes are done. -Add chopped cabbage and cook another few minutes until that is done. Season with S&P.
-Serve with sour cream and fresh dill on top. 🤤

Restaurant review- Ojai, Ca
(Rory’s Other Place) had a divine menu to choose from- grab and go sandos, salad nicoise, coconut yogurt granola bowls, Macha, chai, coffee, soup- you name it! Many options. My veggie sando on homemade seed bread was SO right and SO full of fiber. We loved this place so much we put an order in on the way back to the airport. So delicious and with a nice little patio outside!

in Solvang did NOT disappoint! What appeared like a literal hole in the wall (you order at a window!) turned into soul warming ramen Heaven you must share! I kept my order and ordered the pickle plate made weekly with the farmer’s market produce & with the small pork belly rice bowl. Take me back! My sisters got ramen bowls that you can add “more in your bowl” to customize it further- from extra broth, to fried garlic, to roast veggies, pickled ginger, etc. Solvang itself was interesting to explore, 5/10, but was 10/10🤘🏻.
