Zuppa Toscana Soup. Delicious and healthy! Recipe below.

Zuppa Toscana Soup

Ingredients:
4 slices turkey bacon
1 ½ pounds Italian chicken sausage
4 cups cauliflower (cutting florets in half is necessary)
½ cup scallions
4 cloves garlic
4 cups chicken stock
¼ teaspoon salt
¼ teaspoon pepper
2 cups kale
1 ½ cup reduced-fat plain Greek yogurt
3 tablespoons Parmesan cheese

Directions:
In a large pot, cook the turkey bacon until crispy.
Drain any grease, set aside.
Add the sausage, breaking it apart as it cooks.
Once the sausage is browned and crumbled, remove sausage and drain of any grease leaving a Tbsp. to sauté the scallions, add to bacon.

Add the scallions to the pan; sauté until translucent, add garlic, sauté until fragrant. Add the bacon and sausage back into the pot.

Stir in the stock and cauliflower, season with salt and pepper and simmer for about 10 minutes or until cauliflower is tender.

Add kale and yogurt.
Bring to a simmer. (Not a boil).
Top with Parmesan cheese when serving.

Makes 4 servings:

Egg Roll in a Bowl 🍲
This is an easy to make recipe. Flavorful, although the Chinese spices were a little overpowering for us. If you try it let us know what you think!

Egg Roll in a Bowl 🍲

Ingredients:
1 cup cabbage or tri-color cole slaw mix, shredded
1/4 cup celery, chopped
1/4 cup scallions, chopped
6.5 oz raw 93% lean ground beef - you will need 4.3 oz cooked (7/8 Lean) - Substitute Ground Turkey if you like
1/4 cup egg beaters
1/8 tsp ground ginger
1/8 tsp garlic powder
1/8 tsp Chinese five spice blend
1 tbsp lite soy sauce

Directions:
Combine shredded cabbage, celery, and scallions. Toss together. Set aside.

Brown ground beef. Throw the veggies in with the meat. Sprinkle stir-fry mixture with ginger, garlic, and five spice blend. Add soy sauce and egg beaters into skillet. Continue to stir-fry until vegetables are tender, but firm. (No pieces of egg should be visible.) Remove skillet from heat and serve.

Here’s a very flavorful and healthy meal that’s easy to make!

Grilled Asian Chicken Zucchini Pasta

Makes 6 servings

• 3/4 cup lime juice
• 1 tablespoon olive oil
• 1 tablespoon sesame oil
• 3 tablespoons reduced-sodium soy sauce
• 2 tablespoons minced fresh gingerroot
• 3 garlic cloves, minced
• 1 tablespoon splenda
• 24 oz boneless skinless chicken breasts
• 1 ¼ pounds uncooked zucchini
• 1 large sweet yellow pepper, chopped
• 1 large sweet red pepper, chopped
• 1 medium cucumber, peeled and chopped
• 1/4 cup minced fresh parsley
• 2 green onions, sliced
• 1/4 teaspoon crushed red pepper flakes or sesame seeds

DIRECTIONS
Combine the first seven ingredients. Pour 1/4 cup of marinade into a shallow dish, reserving remainder. Add chicken and turn to coat. Refrigerate 30 minutes.
Drain chicken; discard marinade. Grill chicken, covered, on an oiled grill rack with pam over medium heat (or broil 4 in. from heat) 5-7 minutes on each side, until a thermometer reads 165°.
Combine remaining ingredients with reserved marinade. Cut chicken into 1-in. slices. Add zucchini and chicken to vegetable mixture; toss to coat. Refrigerate until serving.

Over all, the researchers found, someone’s chances of dying prematurely continued to drop the more he or she moved, up to a plateau at about 25 minutes per day of moderate exercise, such as brisk walking, or 300 minutes a day of light, gentle activity.
