Delicious dinner tonight! Tomato Basil Cannellini Beans with Tofu and Spinach 🍅
Sautéed garlic in olive oil and added cubed firm tofu and cooked for a few minutes. Added half a can of crushed tomatoes and a drained can of diced tomatoes and cooked for several more minutes. Added a can of drained cannellini white beans, chopped fresh basil and chopped spinach and sautéed until spinach cooked down. Lastly added cream cheese and melted it into the pan. You could definitely used vegan cream cheese as well. Added salt and pepper to taste! It was amazing! 🤩

Another delicious weeknight meal! 😋 Moroccan Lentils with Couscous. I used this recipe : https://sweetpeasandsaffron.com/moroccan-instant-pot-lentils/ but without the instant pot and just simmered it all in a regular pot for about 25 min or until the lentils were cooked. And I forgot the celery but it still turned out delicious 😜

Delicious Vegan Thai tofu lettuce wraps
Quick and easy for a weeknight dinner!

* 1 Tablespoon sesame oil
* 
¼ cup diced onion
* 
2 cloves of garlic
* 
1 tablespoon minced ginger or ginger paste
* 
1 block extra firm tofu
* 
¼ cup soy sauce,
* 
2 Tablespoons Thai sweet red chili sauce
* 
juice of 1 lime
* 
1 teaspoon maple syrup or honey
* 
⅓ cup chopped peanuts
* 
¼ cup chopped scallions
* 
Chopped cilantro
* 
¼ cup shredded carrots shredded
* 
1 head butter or boston lettuce

Cook onion, garlic and ginger in the sesame oil for a few minutes. Crumble the tofu by hand into the pan and sauté for about 5 more minutes. In the meantime mix the soy sauce, chili sauce, lime juice and maple syrup then pour over the tofu. Cook for a few more minutes then add the scallions, carrots, cilantro and peanuts.
Use the lettuce to make wraps and enjoy!
