Hey guys. Hope you are making the best of your quarantine times. As stressful as this may feel, I am trying to stay positive and keep as much normalcy as I can. 😊
Here are two favorite recipes from my last cooking class before practicing “social distancing”.
Vegetable-Lentil Curry:
Mix coconut milk, red curry paste, turmeric, cayenne pepper, lemon grass and ginger. Add your favorite veggies (here: broccoli, carrots, snap peas, mushrooms, tomatoes) with cooked lentils. Cover and cook for 5-10 minutes. Garnish with fresh basil.
Cauliflower Rice:
Sauté cauliflower rice in coconut oil for 5 min. Add paprika, turmeric, dried thyme, parsley and lemon juice. Season with salt and pepper.

In this life changing period let’s focus on keeping our immune system strong:

Make immune boosting foods
Take walks and keep moving
Catch some sunshine
Be creative (great inventions have taken place in isolations!)
Dance/ sing/ laugh
Watch uplifting movies
Meditate and get back to basics
Stay connected with friends and family
Connect with nature around you
Write things you are grateful for
Practice forgiveness and let go of negative feelings
Get 7-9 hours of sleep
Drink plenty of water
Be thankful and smile because there is always hope!

Here is an immune boosting soup recipe:

Make Dashi broth by adding kombu and dried bonito flakes to water and simmer for 30 min. Then drain.
Add your favorite vegetables and white miso paste and simmer for 5-10 min. Here I added sulfur rich vegetables: enoki and shiitake mushrooms, spinach, broccoli, tomatoes and carrots. So yummy! Enjoy!

The immune system is an interactive network of organs, cells and proteins that protect the body from viruses and bacteria or any foreign substances.
When our immune system is working properly, we don’t even notice it. But, when we have an under- or over-active immune system, we are at a greater risk of developing infections and other health conditions including allergies and autoimmune diseases (RA, IBS, MS ..)
In light of the current health crisis, here is an immune boosting homemade recipe for you my friends:

2 garlic, coarsely chopped
4 cinnamon stick
2 inches ginger, sliced
4 cardamom, crushed
2 cups boiling water

Cover and steep for 10-15 min; then drain and drink with lemon juice and honey twice a day.
