I have been feeling a little low on the energy side of life this past week so I didn't do my usual Monday meal prep. Not only that my normal schedule is off because my crotch goblins are out of school for summer. After a particularly busy day I went to get something to eat and realized it's all "easy" foods, full of empty calories and preservatives and other junk that my body has a difficult time processing. So I grabbed my neighbor and ran up the street to the store, we grabbed a coffee and we both took a moment to just not be in the craziness for an hour and shopping with a friend is much more fun than shopping with kids. I got my groceries, came home and although that took all the energy I had, I made sure I washed and prepped my fruit before giving in to the exhaustion.
Point being is that meal prep doesn't have to be a huge elaborate event. Washing and cutting fruits that you would already do to enjoy is meal prep. I add mine to containers because my goblins will steal all the fruit if I don't put them in "Mommy Jars". This will be breakfast and or snacks over the next few days. Sometimes I'll eat it with a protein shake to get my protein portion other times I'll do greek yogurt.
If you're overwhelmed by the idea of meal prep start with one thing. On weeks I just don't have the energy I will prep for the one meal time I know I will avoid if I don't have something ready, breakfast. So start small, give yourself just 1 healthy meal or snack each week. You can cheat and buy precut fruits, veggies and meats too! There is no "wrong" way to do this.
