These Giant Mozzarella-stuffed Meatballs are delish and a big hit in my family. Even when the pasta runs out we eat just the meatball. 😍

Giant Mozzarella-Stuffed Meatballs
Ingredients:
1 lb ground beef
1 lb pork
1 egg
1/2 tsp garlic powder
1/2 tsp onion powder
1 1/2 tsp fennel ( fresh ground preferred)
1/2 tsp Italian seasoning
1/2 tsp Italian parsley
1/2 tsp basil
1 tsp salt
1 tsp pepper
1 cup Panko
2 (8 oz) packages shredded mozzarella
1. Mix the meats with spices the day before
2. Grab a hand of mozzarella and squish to form a ball and wrap meat around it.
3. Brown all the meatballs in a pan and add your preferred sauce. Simmer until the meatballs are cooked though or inside temp reaches 160. Serve over pasta and add Parmesan cheese! So easy and the whole family will love these!

Teriyaki Chicken over rice, veggies, sautéed Bok Choy and beet stems, tempura broccoli, sweet potatoes and zucchini. 😋🤗😍 Of course I had to drive to my Mamaw’s house and deliver some for her. She love, love, loooooooves tempura vegetables.

I sautéed the Bok Choy in a wok with about a 1/4 cup of water and finished them off with some soy sauce.
Same for the vegetable medley just cooked in a bit of water in the wok and added a little salt.
The chicken thigh I cut off the bone and marinated overnight in a Cup of OJ, 1TB of ginger and garlic powder and onion powder. Then I sautéed until cooked through and finished off with teriyaki sauce.
The tempura vegetables I used were sweet potatoes, broccoli and zucchini. I just followed the directions on the tempura box.
I love that this meal is not heavy on the carbs. It’s mainly a lot of veggies which is just the way I like it.

Breakfast smoothies are the best! So good for you. I add spinach (and kale usually) and you don’t even taste it! I like to start my morning off with these. Here’s what I add in the order I put them in my blender:
Frozen fruit: bananas, blueberries, strawberries, raspberries, grapes, dragonfruit.
Frozen: beets.
Dates
Almond milk
Plain Greek yogurt
Chia seed
Flax seed
Smoothie mix with: maca, ashwaganda
Ginger
Collagen peptides: good for joints and skin
Honey
*tomorrow I’m adding wheat grass for the first time.
