A decadent dark chocolate cream with just three ingredients, plus the topping.
It's in between a mousse and a pot de crème 🍫🍫
Chocolate Cream
Melt 1/2 cup canned coconut cream with 4 ounces of dark chocolate. Remove from the burner. Add one teaspoon of vanilla and 1/4 cup more of coconut cream.
Spoon into small 3 ounce glassware or ramekins.
Refrigerate and remove 1/2 hour prior to serving.
Top with your favorite whipped cream and raspberry sauce.
Raspberry Sauce:
1 cup raspberries, fresh or frozen
1/2 cup water
1/4 cup sugar (or 1/3 cup if you want it sweeter)
Simmer 7-10 minutes. Add a third of a cup whole rasberries in at the end of cooking. Chill and spoon onto the top of the chocolate cream.
I also made a sweeter raspberry syrup for coffee, dessert, and mocktails/cocktails.
Raspberry Syrup:
1 cup raspberries
1/3 cup water
2/3 cup sugar
Simmer 7-10 minutes. Strain through a fine strainer, 2 times. Refrigerate for up to 1 week. Makes 3/4 cup.
