This Thanksgiving was all about learning what MCAS friendly Thanksgiving food I can have. I made these yummy Pumpkin Coconut Custard Muffin Cups for desert!

- Pumpkin Puree
- Coconut Mill
- One Egg
- Pinch Of Salt
- Maple Syrup

Baked in a muffin tin at 325 for a half hour.

Low histamine cabbage rolls with creamy veggies. This recipe called for mushrooms, but I can have a reaction to them so I used sweet potato instead.

For the creamy vegetable recipe I used:
- Softened sweet potatoes.
- An artichoke heart.
- Leek greens.
- Chopped green onions.
- Basil.
- Turmeric.
- Macadamia nut butter.

I lightly cooked the greens, and then put all of these ingredients in a food processor and blended them up with a little extra virgin olive oil. Then scooped creamy veggies into a cabbage roll.

Relaxation is crucial to mitigating MCAS. Stress can be a significant trigger and release hormones such as cortisol and adrenaline that release histamine, heparin, tryptase, and protease. These mediators can cause a wide range of symptoms. In me, those symptoms appear as dizziness, fatigue, muscle spasms, joint pain, high tachycardia, and blood pressure drops. Last night I experienced a flare up, and it felt so bad, I had to hit my life alert button. It is a scary and difficult experience. I do my best to surround myself with calming things. Like my instruments, books, and art supplies. These things aren't just for fun, they are impetrative to my health. Understanding the relationship between stress and MCAS can help individuals who live with it develop effective strategies to minimize symptoms and improve quality of life. Gentle sounds, breathing, and light yoga are just a few ways that I manage mine.

I was recently diagnosed with MCAS, after searching for answers since the onset of more serious symptoms in 2017. Upon receiving my diagnosis, I realize that I've actually been experiencing these symptoms my entire life, and was simply tolerating symptoms throughout the earlier phases of my life.

As a result of my diagnosis, I've had to completely overhaul my diet, as I have learned that even some of the healthier things I eat can cause anaphylactic reactions.
This Halloween, I became rather upset about my inability to enjoy the usual chocolates and candies. So I searched and found a very simple cookie recipe I'm able to have and did some baking instead!

I can no longer have peanut butter, so I got myself a small food processor and have been making my own macadamia nut butter instead.
To make the macadamia nut butter I simply blend the nuts with a pinch of salt and a little bit of coconut milk.

For the cookies I mix up:
- Macadamia Nut Butter
- Maple Syrup
- Gluten Free Flour

Preheat the oven to 360 F and bake for 12 minutes on parchment paper.
I have not perfected their shape yet, but they are delicious regardless. I added some shredded coconut this time because I miss Almond Joys.

MCAS friendly low histamine Apple Braised Red Cabbage. I had to tweak this recipe a bit because some of the ingredients in recipes I found, I have a negative reaction to.

- Thinly sliced red cabbage.
- Chopped apples.
- Extra virgin olive oil.
- Maple syrup.

Cooked slowly on low heat, but not for as long as typically suggested because histamine can build up the longer food is heated. As soon as the red cabbage was tender was long enough. I worked in batches, to not overcrowd the pan.

I had mashed potatoes with this on the side this evening. It was a deliciously perfect pairing!
