UPDATE + MEME ROUND UP 🤠

Thanks to our amazing friends Cody and Shelby, we managed to prep more than SIX HUNDRED FIFTY cookies. That’s a whole lot of cookie. We couldn’t have done it without them behind the scenes. Truly the greatest people!! We’ll chat more about the amazing community behind us but for now…phew

6 days of prep. Some sore feet and knees. And some sleepy brains. We’re here on the eve of our pop-up 🙏🏻 This is the home stretch, y’all! We’ll be in the shop today to finish the last bit of prep. ONE MORE SLEEP!!!!!!

Back at ye olde stomping grounds for the very last Coping Cookies pop-up in the history of everything.

Join us at in Capitol Hill for your very last chance to snag cookies! Final flavors announced soon! A few things though:

🔸 We will be selling alongside Kemi Dessert Bar’s usual Sunday lineup. Check out her page for a preview of the drinks and sweets she offers 👀 We’ve tried nearly all of them!

🔸 There will be a posted person limit inside the shop to keep things organized. Please keep an eye out!

🔸 There will be a cookie purchase limit (TBD)

Makes us so happy.

Let’s talk cookie 🍪

Okay y’all. This is IT. Take a long hard think! At some point, you ate a cookie and it touched your soul. You took more bites than you should have. You maybe even shared a bigger piece than usual with a friend. Then it was gone. Finished. Zero crumbs. You didn’t know it would be your last time.

We want to know what flavors you want to see on 4/27 (our final pop-up) (FOR REAL THIS TIME). Some folks messaged us asking if we would ship from New Mexico. No! After the 27th, our hands will stop creating these little big monsters! Coping Cookies will be no more.

Alright y’all. Wondering what we’ve been up to since closing ye olde cookie shop?

𝗜𝘁 𝘄𝗮𝘀𝗻’𝘁 𝗽𝗿𝗲𝘁𝘁𝘆. But it was necessary.
And that’s life.

The last year feels like a blur in both good ways and bad! First of all - end bankruptcy stigma. IT HAPPENED, OKAY 😂 and it was honestly the best thing we could have done to kickstart the rest of our lives. A clean slate. But phewww that March through June span in 2024 was ROUGH. Financial ruin ain’t fun. But shoutout to those of you who kept us afloat - you know who you are.

There are some pictures of us throughout this post doing things we enjoy. Lots of coffee, traveling a little, WE TURNED 30, visiting family after years of not being able to, doing new things, reconnecting old friendships while also strengthening our personal one.

But we have an announcement now…We’re moving to New Mexico - Sam’s home state! It’s a place for us to rebuild, find new community, and really work toward what we see for the remainder of our lives. We have ride-or-die friends that we will visit in Seattle, of course. But I’m afraid our small business adventures in Seattle are done after April 27th (more details on that event to come!!!!). We’re beyond excited to have one last event. It’s bittersweet. But it also feels like closure 🥰 So…once that’s it…that’s it.

Anyways. Of course I gotta end this with comedic relief. The last meme slides is an accurate progression of our time from March 2024 to present 😂 FULL SPECTRUM OF HUMAN EMOTION!!!

Thank you will never be enough!

We say “Seattle” in this post…but there are so many of you in areas beyond that have stuck with us through all of this. There aren’t enough words to give to you all to express our gratitude. And there aren’t the right kind of words to describe how we feel right now.

We started with one tiny Kitchen-Aid - a gift from Ashley’s mom after Sam was laid off in 2020. After realizing our friends and coworkers LOVED the cookies, we upgraded to one tiny rack in a commissary kitchen. It’s all we could afford at the time. Every day we transferred ingredients back and forth, went to the store to buy butter and eggs, fine tuned our recipe, and worked our way into renting more kitchen space. People always ask how we got here…and the truth is, we have no clue 😅 All we know is that we wouldn’t have gotten this far if it weren’t for the people holding us together by showing up for us.

Loads of small businesses say they’ve got the best customers ever. We say the same thing! It takes a special business and a special guest to make it work. We have people that have been with us all four years! And we have people that have only discovered us recently…that we KNOW would have done the same thing.

If people even read this far, thank you. Not sure how to wrap this up…but…continue finding small businesses you connect with 💛 they need you! Small business owners, continue putting your heart out there - it invites the best people in your doors 🥰

Snickers can’t have SnickerNutella because Snickers is a dog. But he doesn’t know that…so the begging continues 🐕

We’re bringing back a crowd favorite for this closing weekend! SnickerNutella will be in limited supply! It’ll be gone before you know it - so getting to the shop close to opening is your best bet!

Here are some details about this closing weekend:

🔸 We will be open from 11am-sellout (or 5pm) on both Saturday and Sunday

🔸 Our shop is located at 1828 12th Ave Ste B in Capitol Hill. Parking is unpaid 2hr parking. We’re also very much so in walking distance from the light rail!

🔸 There will be a limit of 4 of any one flavor. This means you can’t buy all 50 SnickerNutella (It would be totally justified bc this flavor is amazing. But we gotta think of our people behind you who also want 🍪).

🔸𝗪𝗲 𝘄𝗶𝗹𝗹 𝗻𝗼𝘁 𝗯𝗲 𝗮𝗰𝗰𝗲𝗽𝘁𝗶𝗻𝗴 𝗿𝗲𝘄𝗮𝗿𝗱 𝗽𝘂𝗻𝗰𝗵 𝗰𝗮𝗿𝗱𝘀 𝗶𝗳 𝘁𝗵𝗲𝗿𝗲 𝗮𝗿𝗲 𝗮𝗻𝘆 𝘀𝘁𝗶𝗹𝗹 𝗼𝘂𝘁 𝘁𝗵𝗲𝗿𝗲. This final weekend is for tying up loose ends (and saying goodbye). Loose ends are expensive because, unfortunately, we live in a capitalist society. Even though we want free cookies for all, we simply can’t. We’ll save you the details but…the struggle is too real 🫡

Well. Here we are. THE post. We thought we’d last a bit longer than this. Our last service weekend will be this weekend. Saturday 11a-5p or sellout. And Sunday 11a-5p or sellout. Our business is closing for good.

Coping Cookies: 2020-2024 🪦

From contractor delays and a delayed opening, to cruising into our summer slow season, to mistakes made, to back-to-back expensive appliance repairs, to expenses we somehow got roped into paying, to the normal business growing pains that hit harder than they should have -

Here we are. It was always “We just have to make it through summer” or “We just have to make it to spring and to market season.” And now it’s - we’re sorry. We can’t continue Coping Cookies. As much as it pains us to part with the best cookies we’ve ever tasted, it’s the best decision for our mental health, for our physical health, and for our financial well-being. We do not have plans to get Coping Cookies coming back after this.

However, we do foresee our cookies coming back exactly the way they started…in baking for friends and sharing moments of delicious bliss with people we enjoy. We hope you remember these unconventional little, big cookies every time you share with your people, too 💛

🔸 Milky Charms: THE triumphant flavor returns for its yearly appearance 🍀 This is a Lucky Charms cereal base with the magically delicious marshmallows mixed in. It’s filled with a house-made vanilla frosting and topped with marshmallows

🔸 All or Muffin: This is a flavor mixed with subtly tart blueberries and a kinda top secret vanilla dough base 🤫 It’s topped with streusel for a satisfying crunch.
