Never thought I'd enjoy eating quinoa for breakfast until I made these delicious little fruit salads 😋

These were a really nice break from my usual breakfast meal prep rotation. I ate them with a little Greek yogurt on the side and the combination kept me full for hours ✨🙌🏾

3/4 cup dry quinoa
3 cups strawberries
2 cups blueberries
1 cup grapes
2 tbsp maple syrup
1 tsp balsamic vinegar
1 tbsp lime juice
1/4 tsp salt
1/2 cup chopped almonds
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cook the quinoa, chop the fruit, and mix the dressing ingredients (maple syrup, balsamic vinegar, lime juice, and salt) in a separate bowl. Taste the dressing and adjust the ingredients to your taste. Fluff cooked quinoa with a fork and combine all of the ingredients in a large bowl. Divide the salad into 5 or 6 equal portions for breakfast and refrigerate. Enjoy!
