My favorite nut ❤️

One of the largest interventional dietary trials ever performed—the PREDIMED study—followed more than 7,000 people at high risk for cardiovascular disease. They were randomized into different diet groups, and one group received a free half pound of nuts each week for four years. Compared with other two groups, the added-nuts group appeared to cut their stroke risk in half. Regardless of which group participants were assigned to, those who consumed more nuts overall had a significantly lower risk of dying prematurely.

Walnuts may improve artery function, specifically the ability of our arteries to relax and open normally. This is important for heart disease prevention.

Additionally, people who ate more than three servings of walnuts per week appeared to slash their risk of dying from cancer in half.

Beans are a healthy and affordable source of protein! We eat a cup of beans every day, either as hummus, bean chili, black bean soup, pasta made from beans or peas, bean burritos or just on top of brown rice or other whole grain with some greens. Try baked beans on top of a sweet potato for an easy dinner.

Today's healthy waffle:
Mix 1 egg, 1 T avocado oil, 1 cup water.
Add 1/2 cup Bob's Red mill 7 grain pancake mix and 1/2 cup buckwheat pancake mix plus a scoop of collagen powder and a teaspoon matcha green tea.
Cook waffle.
Cover with your favorite nut butter, sliced banana or mango or berries.
Sprinkle with your favorite seeds.
Enjoy!

When you buy a bunch of parsley at the grocery store and you only need to use a small amount of it for a recipe that requires fresh parsley, cut up the rest of it and place it on a plate. Over the next few days, just fluff it up with your hands a few times a day as it dries. When it's completely dry, put it in a small jar and keep it for future recipes that can use dried parsley like soups, pasta sauce, and more. You can also do this for thyme, rosemary and basil. Unfortunately cilantro doesn't maintain its flavor as a dried spice.

I try to eat lots of plants each day but I also make sure I eat a wide variety of them too. This salad contains ingredients from 14 different plants. Try counting up the number of plants you eat each day!

Ingredients: lettuce, arugula, endive, avocado, tomato, komocha squash, red onion, pomegranate, sunflower seeds, walnuts, pumpkin seeds, black pepper, lime juice, extra virgin olive oil.
