Home made citrus-mustard vinaigrette is easy to make. I love salads and have 1-2 per day.
Champagne Citrus Mustard Vinaigrette:
2 parts oil (olive, avocado, Udo's oil)
1 part vinegar
dash of mustard
dash of raw honey
fresh herbs from the garden (optional)..and viola!....
You'll never buy store bought salad dressing in a bottle EVER again after tasting the lightness and delicateness and freshness of homemade. You can whip one up in about 1 minute once you get the hang of it.
A simple balsamic vinaigrette:
2 parts olive oil
1 part balsamic vinegar
2 tsp smooth mustard, dijon or stone ground
I don’t follow recipes for my salads, I just throw in whatever looks good into my salads. Sometimes I even add left over roasted broccoli, carrots, and garlic, or whatever roasted veggies I have on hand.
Today's lunch is my version of a chicken Waldorf salad:
Avocado
Bell Pepper
Walnuts
Apple
Chicken
Blue Cheese
Greens
citrus- mustard vinaigrette
It takes about 5 minutes to assemble a salad when everything is on hand, prepped, and ready to go in your refrigerator.
My dinner salad tonight will be:
Greens
Beets
Carrots
Ground Turkey
olives
Bell Pepper
Balsamic vinaigrette made in the kitchen
w/ side of roasted Brussel sprouts and shallots
I want a vibrant happy healthy body that's brimming with life force and energy.
