I have also wanted to do this- “Swim with the Manatees”! We had a manatee at our local SF Aquarium, as a vegetarian her tank always had cabbages and other veggie snacks to eat ... she was called an “ocean going Potato” by a snarky journalist. But Butterball was the highlight of my visit.
