No matter what I eat in a day, I always start with foods that are easy to digest. It’s rare if I don’t have juicy fruits for breakfast. In summer, my first meal is almost always either melons or mangos •••
Pictured is fresh juiced watermelon. I enjoyed this sitting out in the sunshine. Melons and sunlight is definitely a winning combo! ••• Absorption and digestion are crucial. Optimally, we will be able to absorb nutrients and fully digest what we eat with ease. Fruit is the easiest food for humans to absorb and digest, and it’s delicious •••

My mission is to encourage deeper connection...to self, community, and nature. Often times, the nature piece is not such a strong focus in the health and fitness world. We hear people talk about weight-loss, aesthetics, and diets. Even in more positive circles, topics are usually limited to self-care, meditation, yoga, exercise, nutrition, body-positivity, mental health, and being part of a supportive community (which I agree are all great areas to focus on). What is typically not mentioned are things like sun exposure/absorption, breathing clean air, learning about local/native plant species, walking barefoot on the earth, cultivating healthy soils, spending as much time outside as possible, and acquiring primitive survival skills.
We have clearly become disconnected from nature. If we make strides to reconnect, surely our efforts can help us establish deeper relationships with ourselves and each other. Nature can help us connect to everything and everyone •••

Immune Boost: Pineapple + Lemon + Ginger + Turmeric + Thai Chili Pepper •••
Working full-time with kids exposes me to plenty of germs and there have been a lot of people getting sick over the past few weeks (both teachers and students). Fortunately I have not been one of those people and I’m being sure to do what I can to support my immune system with natural methods •••

Raw Vegan Falafel •••
I’m so happy with how these turned out! I made these up on the spot after messing up trying to make raw hummus. The base ingredients include: avocado, zucchini, sunflower seeds, tahini, garlic, lemon, and parsley. I used an idea from a raw vegan restaurant I used to work at (Ecopolitan) to coat portions of the base in ground flax and sesame seeds before dehydrating. They really have a texture just like cooked falafel after about 6 hours in the dehydrator. Made a meal of them with romaine lettuce, cucumbers, tomatoes, pickles, olives, and tahini sauce all wrapped in a lettuce leaf •••
I typically eat simple fruit meals, but enjoy creating raw gourmet meals every once in awhile. Fresh, ripe fruit and keeping my fats lower makes me feel best •••
