Tonight’s dinner Mexican “honey” lime chicken taco cups. I substituted Brown Sugar for Honey and marinated boneless skinless chicken thighs for an hour. I air fried the chicken and chopped it up into almond flour tortillas and baked them in muffin tins with shredded cheese. Finish with sour cream, fresh tomatoes and a little Tapatio hot sauce for a spicy kick. The original recipe for the chicken marinade is in my Bio. Just swap out the honey! Quick Sunday dinners rock.

I’ve been using this for almost a week and so far, so good. It’s easier to use and I can keep it in the fridge at work. It doesn’t separate like MCT oil and there is no after taste.

If I have learned anything in the last two years on Keto it’s to always be skeptical of anything calling itself Keto. I picked these up tonight. These are tasty but it can be easy to overdo it. These clock in at 5 Net carbs thanks to 4g of dietary fiber and 5g of erythritol. Seems okay but you only get 4 bites. As with anything, portion control is key! Happy Snacking!

Probably will be my OMAD today. Got an omelette with ham, bacon, spinach and cheese. Drinking it with BPDC (Bulletproof Decaf Coffee). I normally do not like cheese in my eggs but the cheese the deli uses is delicious.

One of my favorites. Low carb, 45 calories and delicious. I always add a little grass fed butter and fresh cracked pepper for a fat boost and a little more flavor. Yum!!

I had a fantastic breakfast this morning with my bacon avocado toast on Golden Wheat low carb bread. At 3 net carbs per slice it’s a nice Saturday morning treat. I can’t eat it all the time, but it was definitely delicious! @ Silver Spring, Maryland

It’s might be a new year but it’s Keto Christmas at my There we’re tons of new Keto approved finds in store today including Parmesan wraps Chicharrones in an enormous bag and low carb bread in addition to all my regular shopping staples. There were even crispy cauliflower snacks (they didn’t come home with me). What a great way to begin in 2020. @ Costco

My adult son decided to try Keto for two weeks in August. Too many noodles and sugary coffees had him tipping the scales at 277. What a difference a few months can make! He is down 56 lbs and is feeling fantastic.

Welp...The doctor put me on a caffeine restriction for 5 weeks and I'm one week in, which means NO COFFEE 😭😭😭
