Hard day?

Overwhelmed?

But what if that “reward”…
is actually the cycle?

Because that quick moment of comfort?
It fades fast.

And what’s left behind is:
low energy, more cravings, and starting over—again.

That’s not a reward.
That’s reinforcement.

So this week, I’m choosing differently:

✔️ Pausing before reacting
✔️ Choosing something that actually supports me

Because I don’t need temporary comfort…

And if I’m being honest—
that’s when my structure gets tested the most.

And then later shows up as:
cravings… low energy… and reaching for whatever’s quick.

Let’s be clear:

Skipping meals is not discipline—
it’s your nervous system trying to cope.

So this week, I’m focusing on:

✔️ Prioritizing protein
✔️ Supporting my body instead of ignoring it

Because regulation isn’t just mental—
it’s physical too.

I decided to have a little fun with Easter dessert this year…

Because yes—I’m a little geeky 🤓✨
…and I wanted to pay tribute to the moon voyage 🌙

But let’s be clear—if I’m doing dessert, it still has to align.

Light.
Airy.
Citrusy.
Refined sugar-free.

And baby… this delivered.

This meringue-based beauty is giving citrus moon vibes with that soft, chewy center and crisp outer shell—sweet, bright, and refreshing without the sugar crash.

🍋🌿 QUEEN STEPH NATURALE® LEMON MERINGUE CLOUDS aka Lemon Pavlovas

✨ What you’ll need:

✔️ Egg whites
✔️ Granulated monk fruit (no erythritol)
✔️ Fresh lemon juice + zest
✔️ Fresh berries (I used blueberries 🫐)
✔️ Fresh mint (don’t skip this—it elevates EVERYTHING 🌿)



☁️ MERINGUES

Ingredients:
• 4 large egg whites
• Pinch of kosher salt
• 2 tsp cornstarch
• 1 ¼ cups monk fruit sweetener
• 1 tsp vinegar (white or red wine)
• ¼ tsp vanilla extract

Instructions:
1. Preheat oven to 200°F and line baking sheets with parchment paper.
2. Whip egg whites, salt, and cornstarch until foamy.
3. Slowly add monk fruit while mixing. Beat until stiff peaks form.
4. Add vinegar + vanilla. Mix to combine.
5. Spoon onto baking sheet and create a small cavity in each.
6. Bake for 2 hours until dry and crisp.
7. Turn oven off and let cool completely.



🍋 LEMON CURD

Ingredients:
• 2 tsp lemon zest
• ½ cup pure monk fruit sweetener (without erythritol)
• 2 eggs + 2 egg yolks
• 1 tbsp cornstarch
• ¼ tsp salt
• ⅓ cup fresh lemon juice
• 4 tbsp butter

Instructions:
1. Rub lemon zest into sweetener to release oils.
2. Whisk in eggs, yolks, cornstarch, salt, and lemon juice.
3. Heat on medium-low, whisking constantly until thickened (~5 mins).
4. Remove from heat, whisk in butter.
5. Strain, cover, and chill for at least 30 minutes.



👑 ASSEMBLY
• Spoon lemon curd into meringue centers
• Top with blueberries 🫐
• Garnish with fresh mint 🌿

Simple. Elegant. Intentional.

I fell off… but let’s be clear—I never stay there.

Life will life… and sometimes consistency takes a hit.

But one thing is certain
I reset.

No guilt.
No excuses.
No “I’ll start next month.”

April is about discipline, not perfection. I pledged to get back on track with my exercise goals. I continue to observe refined sugar free eating when it’s feasible! I continue to read labels and cook without refined sugar. I have great recipes I prepared for Resurrection Sunday including a great refined sugar free dessert called Lemon 🍋 Pavlovas that I will be sharing.

My garden workout yielded a 600 calorie burn in 1.5 hours and the result was a beautifully improved garden bed of colorful flowers 💐 🌺 🌷
