METABOLISM-BOOSTING TIRAMISU CHIA PUDDING

The high protein, antioxidant + omega-packed breakfast everyone’s been raving about. If you’ve got a sweet tooth, but don’t want that crash mid-morning, this one’s for you. Here’s how to make it —

INGREDIENTS
1/2 cup chia seeds
1 tbs maca root powder
1 1/2 cups unsweetened almond milk, we love
1 tbsp Treesknees organic cinnamon maple syrup
1/2 tsp or organic vanilla bean paste
2 shots espresso, pro-tip if you don’t have a machine use instant espresso
2 cups plain greek yogurt, our fav is Bestself
4 tbs raw organic cocoa powder + extra for dusting
A pinch of sea salt

DIRECTIONS
In a bowl, whisk together the chia seeds, maca root powder, almond milk, maple syrup, vanilla extract, 1 shot of espresso and 1 cup of greek yogurt. Let it sit in room temperature for at leas 10 minutes, then stir again or let sit overnight. To make the whipped coffee layer, whisk the other shot of espresso with the remaining Greek yogurt and mix. Spoon the chia pudding into the bottom of 3 glasses and add the greek yogurt layer on top.Dust the top with raw organic cocoa powder.

CHICKEN PESTO PARM BOWLđŸ„™

REFRESHMENT MEETS SATISFACTION- WHY OUR CLIENTS ARE OBSESSED THIS SUMMER

INGREDIENTS 
4 cups organic spinach
2 cups water
1 cup organic quinoa
1 cup cherry tomatoes
1/4 cup parmesan

ROASTED CHICKEN
2 chicken breasts
2 tbsp olive oil
2 tsp umami seasoning

ROASTED BROCCOLI
2 cups broccoli
1 tbsp olive oil
1 tsp umami seasoning
pinch of red pepper flakes

ZA’ATAR BREADCRUMBS
1 cup organic breadcrumbs 
1 tbsp olive oil
1 tsp za’atar

PESTO VINAIGRETTE
1 cup basil
1/4 cup olive oil
2 tbsp apple cider vinegar
2 tsp joes umami seasoning
1 tsp garlic

DIRECTIONS
1. Preheat the oven to 425. Toss chicken breasts with olive oil and umami seasoning. Transfer to a lined baking sheet and cook in the oven or air fryer for 20 minutes, until the chicken is cooked through. Once cooled, slice the chicken into bite sized cubes.
2. Toss the broccoli with olive oil, umami seasoning, and red pepper flakes. Transfer to a lined baking sheet and cook in the oven for 15 minutes. I recommend cooking the broccoli at the same time as the chicken to save time.
3. Add water to a pot over medium heat. When the water is boiling, add quinoa. Cover, turn heat to low, and cook for 15-20 minutes. Wash the cherry tomatoes and cut in half.
4. Toast breadcrumbs in a small pan over medium heat. Add olive oil and za’atar. Stir continually and cook until the breadcrumbs are browned.
5. Add basil, olive oil, apple cider vinegar, umami seasoning, and garlic to a food processor. Blend until smooth. 
6. To assemble the salad, add the spinach and quinoa to a large bowl. Add the vinaigrette and toss to combine. Divide the greens between two bowls. Top each with roasted chicken, cherry tomatoes, roasted broccoli, parmesan, and za’atar breadcrumbs. enjoy!

Here's what we're doing this season to feel good and keep us pushing towards are health and wellness goals — and it doesn't mean sitting out or skipping your favorite cocktail.

We believe in truly finding enjoyment in quality, nutrient dense foods. This holiday season, rather than setting unrealistic restrictive expectations, focus on soaking in connection with loved ones and being present. Aim to make gatherings feel more abundant and intentional. Take it from our founder, — "It's not about complete restriction here. During the holidays I recommend nourishing your body with foods and drinks that you actually really love. Slowing down and savoring whatever it is, and checking in with how your body feels throughout the day to guide you in making decisions."

Here's what else were doing this season to stay present and still feel amazing inside-out —

1. Have nourishing meals surrounding the holiday gathering — having a good, satisfying breakfast and lunch prior to your holiday dinner will give you a boost of energy and help you feel way more in control later.
2. Offer abundance — It can be stressful when there's lots of appetizers at a gathering when you know won't make you feel good. Bring options that you know you'll feel good gravitating towards like a cruditĂ©s board with plant-based dips like hummus and tzatziki.
3. Take a pause — before walking into a holiday party, remind yourself what your intentions are for this event. This sets the tone of how the day will go and allow you to stay in-tune with yourself.
4. Check in with your body — Throughout the day, take moments to ask yourself "how am I feeling?" "Am I actually hungry for this cookie and do I even really like it?" Listen to what your body is actually telling you and lead with this.
Incorporate 20 mins of movement — Don't worry about cramming in 2 hours of workouts at the gym. Focus on breathing, getting some sunlight and fresh air which grounds you and helps manage blood sugar and hormones.
5. Hydrate — Prior, during and post holiday make hydration a priority. This will allow you to flush out inflammation from foods you don't eat on a daily basis and get you back to feeling you.

đŸ„ŁđŸ«WILD BLUEBERRY COLLAGEN OATMEAL BAKEđŸ«đŸ„Ł

This fall we are here for all the easy, meal prep comfort breakfast recipes! With this, we are able to set the intention to slow down and savor the mornings before the day begins. This recipe is truly one of our current favorites. Let us know what you think.

Our preferred way of serving this dish — warm up a slice and top with a heaping scoop of greek yogurt + a few fresh wild blueberries. Enjoy.

INGREDIENTS
2 cups old-fashioned oats
Œ cup almond flour
1 tsp baking powder
Œ tsp baking soda
8 scoops collagen peptides
œ tsp sea salt
2 tsp ground ceylon cinnamon
Œ cup coconut sugar
2 Tbsp coconut oil
2 cups almond milk
Œ cup vanilla greek yogurt, dairy free options or
2 eggs
2 tsp pure vanilla extract
2 cups wild blueberries (fresh or frozen)

DIRECTIONS
Preheat oven to 350 degrees F. Grease a 9×13” glass baking dish and set aside.
In a small bowl, combine oats, almond meal, baking powder, baking soda, salt, collagen peptides, sugar and cinnamon. Set aside.

In a separate, small microwave safe bowl, melt butter (or coconut oil).

In a large bowl, whisk together Greek yogurt, eggs, and vanilla and whisk until combined. Add coconut oil and milk and whisk until combined. Add dry ingredients to wet ingredients and mix well.

Gently fold the blueberries into the mixture. Spread evenly in a 9×13” pan. Sprinkle cinnamon sugar over the top of your oatmeal.

Bake at 350 degrees F for 30-40 minutes (shorter if using fresh berries, longer if using frozen). The oatmeal should be browned on the top and the top should spring back when you gently touch it with your finger. Let cool for 15 mintues and serve warm.
