Hey everyone,

It’s been a few weeks since my last update (October 11 feels like a year ago, right?). I’m deep into the grind of OTA school — late nights, group projects, and coffee that should probably be illegal. Some days I’m thriving, some days I’m just surviving — but I’m still here, learning, growing, and pushing forward.

Even while I’m balancing school and family life, Prolong Symmetry is still going strong. My amazing team of wellness therapists has your back — literally. Whether you need massage therapy, stretching, or a quiet space to breathe and reset, we’ve got someone available to help you stay grounded through the chaos of the season.

🌿 Still Here — Just Balancing Life & School! 🌿

Hey everyone,

Just popping in to let you know I’m still around and still working — just juggling school, kids, and clients like a pro multitasker in survival mode. 😅

If you’ve noticed I’ve been a little quieter lately, that’s because this OTA program is no joke — lots of studying, projects, and clinical prep! But massage and wellness are still my heart, and I’m keeping my regular clients and limited sessions open while finishing up this degree.

DINNER! 🛎🛎🔔🔔

🍯 Boho Mama’s Gut-Glow Teriyaki Chicken 🌿

✨ Instant Pot • Lactose-Free • Gut-Healing • Kid-Approved

🥣 Ingredients (for ~2.5 lb chicken thighs)

🐔 2.54 lb boneless, skinless chicken thighs

🥢 1/3 cup soy sauce

🥥 1 can (13.5 oz) unsweetened coconut milk (Thai Kitchen is perfect)

🍯 2 tbsp honey or brown sugar (optional but helps with teriyaki flavor)

🧄 1 tsp granulated garlic

🫚 1/2 tsp ground cinnamon (warmth + gut support)

✨ 1/2 tsp turmeric

⚫ 1/4 tsp black pepper (boosts turmeric absorption)

🍋 1–2 tsp apple cider vinegar or juice of 1/2 lemon (optional but balances flavor)

🦴 2–3 tbsp collagen peptides (stir in after cooking once warm)

👉 Optional add-ins:

1 cup diced bell peppers or 1 cup pineapple chunks

1 tbsp minced ginger (if you find some later)

🔥 Instant Pot Instructions

1. Add everything except the collagen into your Instant Pot and stir.
(If you’re worried about a burn notice, add ~1/4 cup water or broth.)

2. Pressure Cook:

Set to Manual / Pressure Cook – 15 minutes.

Allow 10-minute natural release, then quick release the rest.

3. Optional: For a thicker sauce, switch to Sauté mode for 5–7 minutes after cooking to let it reduce.

4. Finish: Once the food has cooled a bit (under ~120°F — warm, not boiling), stir in 2–3 tbsp collagen peptides to preserve probiotic and gut-healing benefits.

5. Serve: Over cauliflower rice, brown rice, or veggies for a low-glycemic, lactose-free, healing meal.

💡 Freezer tip: You can toss all the ingredients (except collagen) in a freezer bag now and freeze it raw. Label and cook later for the same result. Just cook 35 min from frozen or 30 min if thawed.

Fall means fewer barefoot days and more time in shoes. That shift = tighter calves, stiff ankles, and less balance if we don’t keep things moving. As a massage therapist + OTA student, I know that once ankles stiffen, the whole chain (knees, hips, back) takes the hit.

Why it matters:

Strong dorsiflexors (tibialis anterior) help with safer walking + stair climbing.

Flexible plantarflexors (gastroc/soleus) keep your stride smooth.

Stable peroneals (fibularis muscles) protect you from ankle sprains on wet leaves + uneven ground.

✨ Dinner hack of the night: I tossed leftover fajita steak, ground beef, corn, beans, Lipton soup mix, and cheese all in one pot… THEN crumbled lime flavored tortilla chips on top. Instant Tex-Mex comfort bowl 😋🌮🔥

Sometimes the best meals come from cleaning out the fridge—tonight’s was cheap, quick, and absolutely delicious. Who needs Pinterest when real life leftovers slap this hard? 💯
