I don’t normally make New Year resolutions, but this year I wanted to try making a sourdough starter and sourdough bread/recipes. I am excited to say it really wasn’t as hard as I thought it might be and the recipes so far have been 😋 (except my pizza dough- that was a bad recipe!).
I also made some vanilla extract because I go through it quite a bit and it can be expensive. So easy and quick to make!!

These muffins are a great addition to any breakfast, lunch or snack! I like to keep extra cooked carrot puree in my freezer so I can pull it out, defrost, and use it in recipes like this one. Carrots add beta carotene, fiber, potassium, vitamin K, and B vitamins!

Ingredients: 1 cup peanut butter or any nut butter 1 cup of finely shredded or pureed cooked carrot 1 cup monk fruit sweetener OR brown sugar 1 cup non fat plain greek yogurt 4 tablespoons soft butter 2 egg whites 1 cup all purpose flour 1 cup almond flour 2 teaspoons baking powder 2 teaspoons bakin...
