Fall is here, and thereโs nothing better than a cozy bowl of chili to keep you warm! This Whole Foods Plant-Based favorite is packed with wholesome, fresh ingredients you can easily find at your local farmerโs market or grocery store. ๐๐ฝ
๐๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐:
๐ฝ 1 cup sweet corn (fresh or frozen)
๐ซ 1 can black beans (rinsed and drained)
๐ซ 1 can kidney beans (rinsed and drained)

1 can diced tomatoes (no salt added)
๐ง
1 yellow onion (diced)
๐ซ 2 bell peppers (any color, diced)
๐ง 3 garlic cloves (minced)
๐ถ๏ธ 2 tsp chili powder
๐ฟ 1 tsp cumin
๐ถ๏ธ 1/2 tsp smoked paprika
๐ง Salt and pepper to taste
๐ฅฃ 2 cups low-sodium vegetable broth
๐๐ป๐๐๐ฟ๐๐ฐ๐๐ถ๐ผ๐ป๐:
1. Heat a large pot over medium heat. Sautรฉ the diced onion, bell peppers, and garlic in a little veggie broth until soft.
2. Add chili powder, cumin, smoked paprika, salt, and pepperโstir it all together.
3. Mix in the diced tomatoes, beans, corn, and the rest of the broth.
4. Bring to a simmer and let cook for 20-25 minutes to let those flavors meld. ๐
