Healthier spaghetti
If you don’t have any pre-cooked sweet potatoes in the refrigerator, cook 2 to 3 large sweet potatoes (per pound of meat) in your instant pot first.
Cut your spaghetti squash in half and scoop out the seeds. Then drizzle with extra-virgin olive oil, salt, and pepper.
Bake at 350° for about an hour. Stick a fork in it and make sure it’s tender.
While that is cooking, prepare your sauce. I used ground chicken and sweet potatoes (sweet potatoes are a healthier option versus tomato sauce)
In a large pot, sauté onions until soft, do not burn your onions or make them brown. Then add garlic, ground chicken and salt and pepper. Cook until done. Then add some Italian herbs or seasoning. I like to add basil and oregano. And simmer for a few minutes. Then add two or three large pre-cooked sweet potatoes, per 1 pound of meat.
Mash it all together with a potato masher And simmer, until your spaghetti squash is done.
Assemble your spaghetti squash on a plate and add your sauce and top with fresh herbs (I used parsley)
Don’t forget to pair it with a nice salad 🥗

Easy one pot stirfry

Use a large 8 quart stock pot
Place 2-3 tablespoons of extra virgin olive oil and 6 minced garlic
Turn the heat to medium (never cook on high heat)
Cook for 1-2 minutes ( do not brown)
Then place your chicken ( ground chicken is easy)- I used 2 pounds
Stir often and do not burn.
While that is cooking, cut up your veggies 🥦
When the chicken is done, add your vegetables and sea salt (maybe 1 teaspoon) and stir often until done. ( to cook faster, place a lid in between stirring)
I also added purple sweet potatoes that I had already cooled in my refrigerator! - you can cut up any already cooled potatoes
If at any point it gets dry, add water or broth.
Taste and add salt if needed
Place on a bed of lettuce or white rice.
Enjoy 😋

Pressure cooked potatoes 🥔
Pressure cooking potatoes helps to destroy lectins that can irritate your gut. Anything that irritates your gut can cause inflammation.
Place potatoes in your Instant pot on a metal rack and add 1 cup of water
Pressure cook for 25-35 minutes depending on the size of your potatoes.
Once they are done, place them in your refrigerator.
Once they are cooled, peel them with a knife and use them for your salad, in your soup, potato salad or roast them.
Cooling your potatoes, turns them into a resistant starch. That way when you eat them, they will not spike your sugar, which will not spike your insulin.
Even if you reheat them, they still are a resistant starch!

Roasted (pressure cooked) potatoes 🥔
First, you need to pressure cook your potatoes. Please search a previous post for pressure cooked potatoes.
After pressure cooking your potatoes, place them in the refrigerator to cool. I usually cook a pot of pressure cooked potatoes and put them in the refrigerator to use throughout the next few days. 
After they are cold, peel the potatoes, and then cut them into bite-size pieces.
Place them into a sheet pan and drizzled with extra-virgin, olive oil, salt, and smoked paprika. Then toss.
Bake at 350° for 20 to 30 minutes depending on your oven.
or Convection bake at 350° for 15 to 20 minutes.
Eat them by themselves, a side dish, or toss into your salad 
Enjoy!

Start your new year with smoothies for breakfast !
 If this does not fill you up, eat a banana or apple with your breakfast  smoothie.
Organic wild, blueberries, or wild blueberries is a great base. You can find frozen organic wild blueberries at whole foods. You can find frozen, wild, blueberries in the Walmart freezer section. I also saw organic dragon fruit in the Walmart freezer section.

Start with one cup of frozen, wild, blueberries and add any other fresh fruits and greens 🥬 (lettuce, or dandelion) that you like.  You can also add an herb, like cilantro.  A small half inch piece of ginger helps to decrease your inflammation. 
If you need it a little sweeter, add a half of an apple or half of a banana.
Add 1/2 to 1 cup of water and blend for one minute

Roast at 350* and stir every 15 minutes until tender, but not burnt.
Charred/ burnt food is carcinogenic
