A cozy, one-pot meal that’s rich, nourishing, and full of flavor 🌿🥥

Tender beef, hearty veggies, and warming spices come together for a comforting stew that’s perfect for any night of the week. Finish with fresh lime and cilantro, and enjoy every satisfying bite.

Ingredients:
Sirloin or rib-eye steak, coconut oil, red onion, cremini mushrooms, sweet potato, garlic, curry powder, cumin, coriander, salt, pepper, beef broth, coconut milk, kale.
Serve with cilantro and lime wedges.

Instructions:
Season and brown the beef in oil; set aside. Sauté onion and mushrooms, then add sweet potato, garlic, and curry powder. Pour in broth, scraping the pot, then add beef and coconut milk. Simmer until sweet potatoes are nearly tender. Stir in kale and cook until everything is tender. Finish with cilantro and lime, if desired.

What are your biography and autobiography book recommendations?

In 2025, I made and accomplished my goal to read one fiction book per month as a way to turn off my brain from life or work related to do's.

In 2026, I'm shifting to biographies and autobiographies starting with Dan Gable's, "A Wrestling Life: the Inspiring Stories of Dan Gable." Between growing up in Iowa where we all recognized him as a legend, my son now getting into the sport, and my buddy highly recommending it, that's where I'm starting in January.

Now, I need 11 more ideas for the rest of the year so please reply with your favorites!
