Enchiladas rojas(filled with vegan ground beef & bell peppers) topped with Mexican style shreds ,side of carrots & potatoes cooked in a bit of the homemade enchilada sauce,rice & of course my absolute favorite chiles en vinagre 😍

I’ve been having a little more time on my hands for cooking so I’ll be posting some of the meals made so far.

I apologize for not being as active on here as I should ,life’s been tough & I’ve been adjusting to a lot of changes , doing the best I can lol. These past years have been hard on us all,don’t be afraid to take the breaks or ask for whatever help you need. Prioritize your mental health 💕

Pozole or Tamales???

Don’t get me wrong ,I can eat tamales for weeks straight & have no complaints but...Pozole is my absolute FAVORITE especially during the holidays.. & honestly anytime regardless of the temperature 😩

For years I went without pozole because I hadn’t found the perfect vegan alternative for it ( honestly I was a little lazy 😗) but now that I have, it’s a wrap!!! 🤩
